    Peanuts are the cheapest nuts though they are technically not from the nut family. They are classified as legumes along with foods like green peas, soybeans and lentils. Many people believe that peanuts are not as nutritionally valuable as true nuts like almonds and walnuts, but they actually have the same health benefits as the more expensive nuts.
    Peanuts are low in carbs, and they are rich in protein, fats (mainly good fats) and fiber. They are also an excellent source of various vitamins and minerals. Peanut skins are rich in antioxidant, so it is beneficial to leave the skins on.
    When we grind nuts and seeds at home, it is not possible to grind them until super fine. Commercially ground ones are super fine because the fats or oil are pressed out (defatted) and sold separately. The leftover "cake" is then easily ground into super fine texture and sold as flours. That is why when we grind the nuts and seeds at home, the fat content is still intact hence, we are unable to grind until super fine without turning it into a paste or butter. However, the coarse texture is totally fine as it adds to the crunch.
    I have tried this bread with roasted peanuts, but I find that the bread is a lot darker, smell and taste like peanut butter which is too strong. I prefer to use raw peanuts as the bread is lighter in color and it tastes much milder and more pleasant.
    To ensure that the bread turns out good and without any bitter taste, use good quality and fresh peanuts. You can actually taste it to confirm the freshness. Before grinding the nuts, discard any rotten nuts so that it does not affect the ground peanuts.
    This keto peanut bread cost only a fraction of the more expensive nut bread. It can be a little moist as it is unable to absorb water as well as the other nut bread, but it is light, soft, fluffy and super crispy when toasted. And it tastes pleasant as well. Of course, if you have an allergy to peanuts, please do not try this.

    Total Carb = 6.1 g
    Dietary Fiber = 3.7 g
    Net Carb = 2.4 g
    Calories = 152
    Total Fat = 12 g
    Protein = 7.6 g
    DRY INGREDIENTS
    Ground Raw Peanuts = 390 g / 3 1/4 cups
    Baking Powder = 18 g / 1 1/4 tbsp
    Salt = 1 tsp
    Whole Psyllium Husks = 27 g / 3 tbsp (Note: The psyllium husks must be ground until half its original volume before using then weigh it. This is important as it will absorb the water more effectively and this is actually more suitable for baking. However, if you are using pre ground psyllium powder, only 1 to 2 tsp is required as it is very concentrated. If you add too much, the bread will be denser, wetter and stickier.     WET INGREDIENTS
    Fresh OR liquid egg whites = 6 large (230 g)
    Apple Cider Vinegar = 45 ml / 3 tbsp
    Hot or Boiling Water = 240 ml / 1 cup
    DIRECTIONS
    1. Preheat the oven at 350F or 180C.
    2. In a bowl, mix all the dry ingredients until well combined.
    3. Add all the wet ingredients and mix until a dough is formed. It will look watery initially but as you mix longer, the dough will firm up. The dough is soft and sticky.
    4. Transfer the dough into a standard 8x4 inch loaf pan greased and lined with parchment paper.
    5. Spread evenly and leave the top round.
    6. Bake at the lowest rack for 1 hour.
    7. Cool completely on a wire rack before slicing. This recipe makes about 16 servings.

    Elsie, you have contributed a wealth of inspiration to our bread baking. I never made homemade breads prior to exploring low-carb options, so I have nothing to compare. What I will say, is that I have learned how to have fun experimenting, and I have you to thank for this. I love peanuts and will add them to my shopping list. I have visions of a chocolate peanut butter cup cheesecake! I would also like to try a peanut tortilla with some flax and psyllium. Thank you my dear, for all that you do for us.

    OMG...this bread is one of Elsie's best recipes. I made it last night & came out absolutely perfect!
    It has a very mild peanut taste & if you eat it with cream cheese or as a sandwich u can't even detect it. It's super light,super delicious...I thought seed breads are my top faves but now this one is on top.
    I used raw blanched peanuts without skin. Grinding wasn't like seeds. It was harder & it doesn't become very fine texture. It remains pretty granulated so don't push it too far so that it doesn't become a paste. The end results are AMAZING.

    Dr Eric Berg youtube channel states the only peanut butter or peanut that should be used is Valencia. Other peanuts have aflatoxins which is what causes allergies.

    I made this bread a few days ago and it was absolutely delicious,so so good. The peanut flavour is subtle due to the fact that raw peanuts are used and it's surprisingly filling.
    I'd love to see an egg free recipe for this please because I'm planning on making this every week and I'd be going through so many eggs and having too many yolks left over. Thank you.

      So glad to hear that! Thanks so much for your feedback ❤️ I am not sure whether the eggless version will work as I have yet to experiment with it. You can use liquid egg whites in cartons so you don't have to deal with the leftover egg yolks.

      Thanks ! Frankly I have not tried with macadamia nuts as it's too expensive. I suggest you follow this hazelnut recipe as the peanut bread has different ratios due to the difference in water absorption level.

    Eventhough there are some health benefits from peanuts, conventional peanuts contains aflotoxins which we should avoid. Organic peanuts has lower aflotoxins . I sure like the look & texture of your peanut bread!!

I’ve just ordered some different types of peanuts to try, one is redskin, another they call pale skin and also the blanched skinless like one of your followers used so I will experiment to see which version I like best.     I just LOVE your recipes and all the information we have learned from you. The one problem I have is that I live at a high altitude and bread recipes I make except for yeast breads (yeast causes me to get migraines) are wet like bricks. I'm sure it the high altitude. Do you have any suggestions? I so want to make these breads and have them turn out beautiful like yours! ❤

      Have you seen this Keto bread baking tutorial (link below)? Most of these issues are due to improper use of psyllium husks so you will have a better understanding after watching this video. As for high altitude baking, I understand from feedbacks here that they baked the bread longer at the same temperature and the bread turned out fine. Hope this helps 🙏

    Hi chef I made it last night, I left it cool overnight and I have 2 pieces this morning one toast with homemade cheese avocado and chia seeds on top😋. FANTASTIC ' BREAD' 👍👌👏.       Yes you can try this as it's better with more leg support so the bread will not expand sideways. Except that its slightly longer at 9x4 instead of 8x4 inch

    I was looking for peanut bread the other day and couldn’t find one. Now here I found this one, just released. Waltham a coincidence!! Thank you.
    As I browsed through the other videos of yours, I noticed that you add a significant amount of apple cider vinegar, 45ml, in some of the recipes. In some, it is optional. I know vinegar works with baking soda, but usually it doesn’t take as much as 45ml. Could you elaborate the purpose? Or is there a video that explains? I wonder if the bread would taste sour?! 🥲Just want to settle this before I actually make one with this recipe. Thanks for the video and reply. 💕😊🙏have a great day!!

    Hi Elsie, can I check please, when using the 1 teaspoon ready powdered psyllium husk, my mixture never formed a dough like yours, it remained watery. I therefore increased the powder to 3 teaspoons but still didn’t get a dough like yours. It was more a thick gloopy mixture. I didn’t want to add more so baked it in that state. Unfortunately it did come out wet and dense without much rise so I suspect the 3 teaspoons were too much.
    Am I right in saying that when using only 1 or 2 teaspoons of the ready powdered psyllium, it is acceptable to have a runny mixture? Or have I don’t something wrong in the recipe?

      Yes when you use preground psyllium powder, you need to use 1 tsp only (at the most 1.5 to 2 tsp) and the dough will be runny but it will bake up fine. 3 tsp is too much. As you do not need to shape this dough it's fine to be runny. That's why I always recommend to use the whole psyllium husks and grind it until half its original volume. It is the best for baking.       Frankly I am not sure as I have not tried that. The defatted ones are not easily available and are quite expensive. I suggest you try the same amount first and please let me know how it turns out 🙏

      @@lowcarbrecipeideas i am having difficulty grinding the psyllium husk flakes to 1/2 the volume. I have used a spice grinder and also my coffee grinder and both times I would get about 3/4 of the original volume. So 1/4 cup would measure 3 tablespoons after several bursts of grinding. However it was nice and powdery. Using this in the coconut flaxseed bread. I used 25 grams and it came out a bit heavy and very moist. What do I do? Thanks

    390 gm peanut or 3 and quarter cups...are you sure with your conversion?

      It is based on 120 g per cup of flour. For best results, please weigh the ingredients as not all cups and spoons are the same everywhere.

    You can buy peanut flour also (not peanut butter flour), will this work also? Its very soft and appears much dryer than grinding raw peanuts.

      Sorry you can't. Keto Bread is complicated and requires a lot of experimentation before knowing whether it will work or not. Vegan bread is even more complicated.

    I notice that there is no added sweetener, like monk fruit, erythritol etc, to this and the hazelnut recipe. Can I add in sweetener and how much would you recommend if it is OK to add? ☺️😊

      These are plain bread but you can add sweetener if you like. How much depends on your preference. I do find that by adding sweeteners like erythritol and Monkfruit the bread doesn't crisp up much when toasted. It's fine with allulose but it makes the bread very dark..But some people commented that with erythritol and Monkfruit their bread still crisp up when toasted. If you do try please let me know what's your experience thanks

      Unfortunately not as flaxseed will not make the bread bulk up so there's no volume. I spoke about this in my keto bread baking tutorial video, see link here;

      @@lowcarbrecipeideas I used ground psyllium husk. Bread was too dense or wet. I used all ur ingredients with same amount. I feel dough was more bit wet than urs. Can I add another ingredients in it like flaxseed to make it more firm? Try to make experiment with flaxseed or peanut bread. Peanut flour itself make sticky texture..

      @@drfundotcom2054 Did you grind the whole psyllium husks until half its original volume? This is important as it will absorb the water more effectively. The dough is sticky but it's normal and will bake up fine. The most important thing is to get the psyllium husks right. You can watch these 2 tutorials for better understanding and success. Please do not replace any ingredients as it will not work without testing;

      Yes you can as long as they're of good quality and fresh. The crumbs will look more whitish.

      Unfortunately you can't replace the psyllium husk as it is the most important ingredient to replace gluten. I do have a few bread recipes without psyllium husks using almond flour, coconut flour and flaxseed respectively. The texture is more cake-like and a bit crumbly but its a good alternative if you are unable to get psyllium husks. Please check out the playlist🙏

      Unfortunately, you can't replace the. Psyllium husk as is the best replacement for gluten as it holds everything together and provides elasticity to shape the dough. It makes the bread more bread-like. Without it, the bread will be more cake-like and crumbly. Psyllium husk also makes the dough bulk up, so we get a nice big loaf. Maybe you can try ordering from online stores such as Amazon

      Yes you can use 3 whole eggs but the bread will not rise as much as using egg whites
