CALABACITAS CON QUESO | Mexican Squash with Cheesy Panela | Meatless ❤

- CALABACITAS CON QUESO dish is an oldie, but definitely a goodie. This dish takes me way back to my childhood, the flavors in this dish are out of this world delicious. It is such an easy dish to prepare, and it is so perfect this time of year when the weather is changing and the leaves are starting to fall because it's soupy but yet hearty. There are many ways to cook CALABACITAS, but this dish has sweet onions, green onions, yellow peppers, tomatoes, cumin, Mexican oregano, fresh garlic, and cilantro but what gives it a notch above, and the best part is the cubes of Panela cheese that melts into soft pillows to top it. I like to serve it with Mexican rice and freshly made corn tortillas. A dish made for a king.
INGREDIENTS----------------
3 CALABACITAS (Mexican summer squash Tatuma cubed)
1/2 onion (julienned)
3 medium green onions (diced with some green)
1 heaping C. corn (fresh, frozen or canned)
5 large Roma tomatoes (3 diced, 2 blended)
1 serrano pepper (optional)
2 large garlic cloves
1/2 tsp Mexican oregano
1/2 tsp whole cumin
1/2 tsp peppercorns
3 tsp Better than bouillon chicken flavor
1 tsp tomato paste
Salt to your liking
1/2 C. water (for molcajete)
1 C. water (for blender)
Small bunch chopped cilantro
2 Tbsp cooking oil
1 10oz. Panela Cheese (cubed)
BLENDER INGREDIENTS-------------------
2 Roma tomatoes
1 serrano
1 C. water
MOLCAJETE INGREDIENTS--------------------------
1/2 tsp whole cumin
1/2 tsp peppercorns
1/2 tsp Mexican oregano
2 large garlic cloves
pinch salt
1/2 C. water

I love this dish so much! My mother and grandmother would make this and I was the only one of my siblings who would eat it lol! My grandmother has been gone a few years now and my mother has Parkinson’s and can’t cook anymore but I made it for her a couple of months ago and it brought her to tears. Awww “the memories” she said. Thank you for sharing your dishes! It brings back beautiful memories for me when I would watch my mother and grandmother cook these delicious meals! Much love to you ❤️

My mother and grandmother used to make it too, slightly different but same basic structure. I make my own recipe, but I’m going to make this recipe.

First of all, I enjoy watching Rachel cook. I feel her love for cooking and she’s such a sweet lady! I’ve tried several recipes and Calibasitas con queso was the latest. It was delicious! It’s definitely a keeper for me! My 15 month old granddaughter even liked it! It’s a healthy, easy dish and good as the main dish with beans and rice on the side. Keep sharing your wonderful recipes! I’ve made this 3 times in the past two months with modifications based on the type of squash I in my garden or got from my farm box subscription. It’s delicious and so simple. I like the queso fresco texture but panela is delicious too. Thank you for sharing.

Rachel, you may have posted this recipe in October, but now in January, I am ready to make it. It doesn't really get cold in the southwest until about this time. I will be trying this soon. I have made both of your salsas and my family love it, they even call be Queen of Salsa. I gave you all the credit. Without your recipe and instruction it wouldn't be possible. I did fail on your fried chicken. I think I'm comfortable with the way I have always fixed it. I'm retired and it is so strange to be learning to cook after all these years. My husband has always been the chef but his job changed and he is no longer able to do it. So..I must step up. He is Guatemalan and hates "American" food. Learning challenge accepted but with your help. He has complimented me on several of your dishes.
