We have a garden out front and we had a major bumper crop of Zucchini so much so that my wife was giving them to people walking by, the UPS guy and postman..Love your kitchen especially your banner about God's Word...so true..take care!

I grew up on this too. Our family recipe has bacon and green chile in it and the onions, corn, squash and zucchini are cooked in bacon grease. We also use Mexican goat cheese.

Oh, I know! I've moved around a bit and my mom would have to mail it to me! I live in Arizona now, so I'm able to go to New Mexico all the time. We make it a point to go to Hatch on Labor Day weekend and pick up enough chile to last us a year.

@@bennyromero8928 Squash doesn't take long to cook at all. So, if you're thinking about letting it slow cook in a crockpot, you might end up with mush. That said, getting a small crockpot would be great for so many other recipes. I hope to share my barbacoa recipe soon, and I make that in a crockpot.
Yes! I love that you add green chile. It’s wonderful that way. I also use Mexican squash and pattypan squash, which is shaped a little odd and makes it trickier to slice, but I like to always have a variety. You really can’t go wrong. Thanks for taking the time to comment. 🤗

I always caramelize the corn a little bit. It was nice to see this version again. I haven't had it in so long I think I'm going to make it
There are so many variations, all of them good in my opinion. It's real common for people to add tomato. If you have green chile, try adding that. It's fantastic, but I know I get a little carried away with chile. Carmelized corn sounds yummy.

I also make it with hamburger meat that not to greasy and make put calavacitas onions corn green chlie and before serving I put cheese and cut up a fresh tomato and serve its really good to❤😊
I like to layer the vegetables. First corn, then onions, and crookneck yellow squash and little green calabacitas ( if you can find them). I drizzle oil on top and then sauté on high heat so the corn starts to carmelize. Then stir, add salt and lower heat. Squash has water, so there is no need for extra liquid. Add fresh roasted green chile and cheese, if desired.
One of my favorites is calabacitas con pollo. Of course we always had pintos on the side. In my opinion Mexican food without pintos is just not the same.
Try these Calabacitas with my New Mexican Spoon Bread and some pinto or black beans. There’s just something about the combination that I love so much. We do meatless meals quite a bit, too.
Yummy! I love calabacitas! Im gonna try it with cream cheese instead of milk. Or I wonder what would be a good substitute for people that go dairy free. I have seen coconut milk being substituted for regular milk but I think that would be a little strange or it may throw the flavor off. 🤔🤔
Is heavy cream considered dairy-free? It’s the calcium you’re avoiding, right? I’m clueless on this. But definitely would try the cream cheese and not the coconut milk. You’re looking great, BTW, so whatever you’re eating is working. 🤗
Is it okay to use spaghetti squash?I've always used yellow squash but was given spaghetti squash ystrdy so I thought I'd try it..perhaps texture is too thick?Thank you fir recipe, I've never added water before..I do also put tomatoes and I too make it year around. I too am from Silver city NM
I've only made it with yellow squash, zucchini, Mexican squash and Patty pan squash. I've never tried spaghetti squash, but I would imagine it would still work so long as you cut it similarly. You'll have to let me know if you make it. I have a sister who lives in Silver City.

That's Not The Traditional Way Fry The Squash In A Little Bit Of Oil And Raw Corn Till A Tad Brown 👈 Or Add Can Corn And Then Green Diced Jalapeno Chili Cook Til Tender Eat With Fresh Tortillas But Hers Still Looked GOOD Too....I Would Eat It A Different Experience 👍

I make this all the time and didn’t know to use milk, I also add a chopped tomato for color and some green chile. I will try it like yours tomorrow. 😋
The milk makes it a little more creamy. But, I’ve never had calabacitas I didn’t like. 😜

You absolutely can. It's all a matter of preference. This is just how I grew up eating them. We would also add green chile to it from time to time.
