5dj19 is correct needles for 73/74/75 h1 and put clip on 3rd slot down from top of the jet needle as a starting point.
The proper pilot jet is 30 & mains are 92.5 as stock setup
With stock airbox & filter too.
As for compression, the 135 psi on outer cyls is ok & center is a bit high but not horrible and maybe center cyl has extra carbon buildup causing higher compression.
But the slight difference in compression does not cause big tuning issues,
Idle mix pilot screw base setting is 1.25 turns out from lightly seated.
Ok, if 10% ethanol pump fuel is used in this bike with chambers you should go from stock 92.5 to just 95 mains as a starting point
with stock non red NGK b9hs plugs,
But the 100 mains you took out of the bike are stock setup for the older Gen H1’s and not newer gen 73/74/75 Gen h1 that come stock with 92.5 mains.
Then when motors warmed up you set idle speed using thumb screws with the springs on them that are on top of the carbs.
These triples are very sensitive to over jetting being too rich but too lean isn’t good either.
Also, even though these are not high compression motors due to poor comb chamber & poor head design too they can detonate/ping on todays crappy 91-93 octane 10% ethanol gas leading to engine damage in a heartbeat.
To avoid that you go to Wild bills corvettes online to buy the real lead used in gas 50yrs ago as a fuel additive mixed to 98octane lvl which is approx 2-2.5 ox lead octane booster per gal of 91-93 pump fuel yo get approx 98 Octane fuel.
Slso, I found Bel-ray SI7 syn 2T injector oil yo be far superior in protection & reduction in 85-90% of the smoke when motors warmed up,
Btw, the large brass part you pulled out of center if the carbs is called a Needle Jet per Kawi fact srv’c man & not an emulsion tube.
Also ensure you do a good mechanical carb syn using your fingers in carbs to feel slides when you turn/open throttle to ensue all 3 open at the same exact time for even smooth carb operation.this is coming from my 50yrs wrenching restoring Kawi triples & z1’s,
Almost forgot, you setup triple Kawi carbs all the same git all 3 cyls snd don’t have to setup middle cyl richer then outer cyls.
Plugs should look med to light tan when mixture is correct.
If you have any questions email me (swwheaton@verizon.net) & I will try to help you out.
    Happy motoring!
    Scott
