Long after the fact, but just watched this whole series. Nick, your craftsmanship is impeccable. Is there room for improvement? Always. Are you limited by your tools and available space, such as a lack of a spray booth. Yeah, we all are. But for using what you have to the best of your ability and knowing when to back away because the return is no longer worth the investment...Your craftsmanship is impeccable. You have my deep respect. She is a beautiful vessel.
I wasn't expecting velcro but why not. Might be NASA's best invention. As good as the outside looks, and it does, man that interior surely looks sharp.
The velcro is a bit of a science experiment, but I think it will be good. In the past I have tried traditional fabric velcro. That did not work. The fabric absorbed water, expanded and peeled off. Here I'm using one of those interlocking mushroom shaped plastic velcros which I think will work a lot better.

Before I had a CNC machine I carved the seats with a right angle grinder. I have an album goo.gl/photos/EQeriERGs6jdbcxD7 showing the process. I do sell the patterns for wood laminations that are glued together to make the seat blank. The patterns do not included instructions, you would have to figure out the build procedure from the photos in the album.
