Great video! Hard to find a good beef rub. I love Kosmo's Dirty Bird on anything beef, and bologna.
I use Valentina's hot sauce for binder, and wrap on beef ribs. Try it!
My very first BBQ was to attempt smoking some ribs. I was so new that I didn’t know the difference between beef and pork ribs. But thanks to many mentors like you, I have been able to learn a whole lot about BBQ. I have never done beef ribs again though. Maybe I should try it again.

I haven't used Uncle Chris's steak seasoning in a hot minute but i used to put that on EVERYTHING. Pretty good

Hey James, I bet those were very tender and tasty. Do you put anything inside your Weber kettle to catch the juices/grease dripping from the meat for easy cleanup?
I probably should but I don't. It would make for easier clean up.

I hear ya. With almost any meat you're going to have some loss. Just take a brisket for example, they always shrink up when cooked. Thanks for stopping by!

I used Pecan Wood. I placed them underneath the charcoal.

You didn't remove the membrane from the back of the rubs?
I usually don’t for beef ribs. You can though, it’s just a personal preference sometimes.
James, did you get the finger ribs from HEB?
Yes.
They turned out excellent.. It just we pay big money for them out here and get very little meat. It's the main reason I don't buy them. Great video and Thx for sharing.

Do you remove the membrane on these ribs?
naz black Sometimes I do. It really depends on how much the butcher trims them. I’ve seen racks where the membrane was the only thing holding some of the ribs together

Can you do a rib vid on the wsm? Searched your whole channel and not a one. I know from a concept standpoint nothing is really too different from kettle to wsm. Would be good to see your process though. Coal set up to vent set up to finish.
You know, I thought I had a video of that already but you're probably right. I never even noticed that. Yeah, I can do a rib cook on my WSM.
Aim'em and Claim'em Smokers I couldn’t find one anyway. Back in the day it was smokenator then slow n sear on the kettle. Maybe a time or two on the treager.

How can you tell how good the rubs are, when you mix 3 or 4 together on the meat? If you were using my rub, and felt the need to add someone else's to it , I'd be insulted! Lol
Because this isn't the first time I've used these rubs so I know what they taste like. They taste good on their own and taste good together. Using multiple rubs gives you a different flavor profilr.
Excellent cook brother! Now I'm hungry. I've recently been using two rubs together that I ordered from Tom @ATBBQ.com. Plowboys Bovine Bold with Cattlemen's Course Tri Tip Seasoning. It's a heck of a good combo. Great job on those ribs!
uncle chris' is WAY too sweet in my opinion. i used it twice and tossed it.
I've never thought it was "too sweet", that's a first.
