Ube Kapampangan Mochi - Complete Easy Step By Step Recipe

  • Complete easy step by step procedure on how to cook my version of Kapampangan Mochi, I used UBE HALAYA instead of the original Red Bean Paste or Monggo Paste filling.
    UBE HALAYA FILLING:
    1/2 kilo Grated Ube or 1 packet (454 grams) Grated frozen Purple Yam (Ube Halaya)
    1/2 CAN - Evaporated Milk
    1/2 CAN - Condensed Milk
    1/4 cup (or more according to your taste) - Granulated White Sugar
    1 tsp - Vanilla
    50 grams - Butter
    In a medium size mixing bowl combine grated purple yam(ube halaya) evaporated milk, condensed milk, sugar, vanilla and mix well. Then set aside this ube halaya mixture.
    On a medium to low pre-heated non-stick pan add butter and pour ube halaya mixture.
    Stir continuously until it becomes thick paste like consistency. Once cooked, set aside to cool and you will need this later for mochi filling.
    UBE KAPAMPANGAN MOCHI
    For filling you will need cooked UBE HALAYA
    STEP 1: MAKE GLUTINOUS FLOUR DOUGH
    500 grams - Glutinous Rice Flour (set aside 1 - TBS for topping/sauce)
    4 tbs - Granulated White Sugar (Caster Sugar)
    2 tbs - Vegetable Oil
    1 & 1/2 to 2 Cups (approximately) - Water
    A pinch - Salt
    STEP 2: MAKE TOPPING/SAUCE
    1 can - Coconut Milk
    1 can - Coconut Cream
    1 tbs - Glutinous Rice Flour
    4 tbs - Granulated White Sugar (Caster Sugar)
    1 tsp - Vanilla
    A pinch - Salt
    Step 3: BAKE already BOILED MOCHI (Oven Temperature: 200 -220 Degree Celsius)

Tama po kayo dapat no ring i normally would do no rings Napansin ko na din habang ginagawa ko yan kayalang 2am or 4am na po dyan gusto ko na po matapos ang video naka ikang take din po yan hehe kaya d ko na inulit pa anyway that first batch e sa amin lang naman po yan for video tutorial purpose lang tsaka napakuluan naman ng maayos. obsessive compulsive po ko kung maghugas ng kamay at mga utensils ko. Maingat po ako mas lalu pa kung ibebenta or kahit ipamimigay pa.

      Hi Rose! Yes, then ilagay mo ang toppings or gata just before mo na e bake kinabukasan. Masmasarap talaga yan e bake just before mo kainin kaya pwedi mo sya e prepare ahead. Thanks!

    Maam..question po..kung sakaling wlang oven or toaster ok lang po b n ung sauce nya lang ang nkatopings sa mochi? Since luto n nman po sila parehas.. salamat po..

      Ok lang yun Cristina kung wala talagang oven. Masarap din yan kasi nga luto na yang sauce pero syempre mas masarap nga lang pag toasted yung toppings. Thanks!

    hi maam thank you po sa pagshare ng inyong recipe mukhang masarap =) question po natry nyo napo bang gumamit ng kakang gata? kung pangtinda po or walang mabilhan, pwede po bang gumamit ng gata instead of coconut milk and coconut cream? pwede din po bang pang sub ung nestle cream instead of coconut cream? salamat po.....=)

      Hi Tonee! Ang kakang gata is coconut cream pareho lang yun. Pwedi mo gamitan just the kakang gata (coconut cream) without coconut milk para ipang topping sauce kahit di mo na lutuin or e pre-cooked kasi e be baked mo din naman pagkabuhos mo sa mochi.
      Nestle cream? di ko pa yan nasubukan. Pero para sa akin i would stick to coconut cream (kakang gata). Thanks Tonee!

    Medyo unhygienic lng for me when you're wearing a ring, especially habang nagpo-form ng mochi.
    Overall looks good, parang bibingkoy ng mga Caviteño.

      Hi Yhen! Kung wala oven ok lang din na microwave di nga lang sya ma toasted nun. nakakadagdag sarap nga lang pagka toasted yung coconut cream na sauce toppings although ok lang din kung wala talaga oven gamitin nalang ang microwave para initin kasi masarap sya kainin pag mainit.

    Gano mo katagal shelf life ng rice flour once po natubog napo sa tubig? 🙏
    Balak ko sna gawin ng wlaang cream sa ibabaw at hindi ibake.. Lagyan ko lng ng ube at cheese sa loob pag kaluto ng rice flour.. Pra mas mdali po sna.

      Hi Cristina! Kung walang oven ok lang no need to steam kasi niluto naman na natin ang mochi ng inilagay natin sa kumukulong tubig. Kaya ino oven lang para ma toast yung gata or coconut milk or coconut cream toppings para lang masmasarap. Thank u for asking!

      Thanks for your comment & concern Leda, i know you mean well and will take this as a constructive criticism. Di lang po ikaw ang nagsabi nyan kaya i think it’s about time to explain the behind the scene of this tutorial video😊
      para lang sa kaalaman ng lahat naka gloves po ako talaga dyan kaya lang dumidikit po ang gloves mahirap e porma mga mochi kaya inulit ko pa po pag video dyan without the gloves pero nakalimutan ko naman tanggalin mga jewelries.
      My very 1st tutorial video ko po to kaya medyo nerbyos pa at nangangapa😊 For tutorial purpose lang po naman yan. Yung next batch wala na po mga jewelries. At kami lang din namn kumain nyan. ilang beses ko po hinugas hugas kamay ko dahil may pagka obsessive compulsive po ako sobra linis ko po pagnagluluto at kahit nakalimutan ko tanggalin mga jewelries e pinakulaan naman ang mga mochi. But still you are totally right dapat talaga wag kalimutan tanggalin mga jewelries. Kaya i took a note on all your comments.
      I was so happy to share this recipe at Madaling araw ko na po ginawa yan kaya di ko na inulit ulit ang video kasi di lang naman po one take lang yan. Tapos may editing pa ng videos. Di po biro gumawa ng tutorials kaya sana mag concentrate nalang sa tutorials yun naman po ang layunin ko para ituro paano pagluto nyang recipe.
      Im sure na majority ng mga manonood natin dito e matured naman to know na di naman nila dapat gayahin lahat ng nakikita nila on this video na di kasama sa recipe. On my other videos wala naman po ako suot na jewelries.

      Hi Mics! Combination of Coconut milk and coconut cream with sugar and glutinous rice ang ginamit ko dyan. But i have tried making this recipe without this mixture sauce instead i used just a coconut cream no need to cook pa kaya so much easier and the taste is almost the same.
