the apps icon website is a gamechanger. is there any way to change mac default apps like notes?

Apple locks most of their apps from changing I believe. I wanted to change the finder icon but you can't natively. IconChamp has a paid version that supposedly can but it hasn't been updated in years so I didn't want to take the risk.
