Hello Maangchi, Just cooked this meal, just like you taught it to be made. Used kimchi made by your recipe and now will need to make more! Never ate whole kimchi not cut up, this way is very enjoyable. Extremely satisfying meal and it does beg for lots of rice. I will be round for a while, ate half the pot myself😁

This is one of my most favorite comfort food made with sour kimchi. Sometimes we braise fresh mackerel instead of ribs (without the seasoning though, the kimchi & brine is salty enough for our liking) because my mom grew up in Yeosu, which is near the sea, and she prefers fish or seafood over meat. Either way, it makes a good hearty dinner.

This recipe is amazing! I made this today following Maangchi's recipe exactly. The only thing I did slightly different was that I had some uncooked lotus root left over from Lunar New Year. I peeled and sliced it the regular way and added it to the pot. It was really really good. The ribs were very tender and the heat level of the spice was not overwhelming at all. It was just right. Thanks Maangchi!
Hello Maangchi, just wanna tell you that I been a long fan since 2009 and wow how the time flew by. Also I wanna thank you for all the recipes you posted, I watched many UA-cam cooking channels like you, cookie with dog, Martha Stewart, Laura in the Kitchen, Hot Thai and many many other great cooks and all of you amazing cooks taught me and gave me the confidence to cook great food even to the point where I develop my own ways. I grew up in a culture that most men should not cook because it’s a woman only thing and my mom never taught me but I always want to and when I try i got heavily criticized but now thanks to you and others I gain confidence and now I cook so good that I cook better than most of my family and healthier too because most don’t how to measure fat, oils or even skim off fats and oils believing it’s flavor lol. Thank you and others for being my cooking mothers.

That's right! When I made my 2 cookbooks, my writers and editor always made sure if it is toasted or not toasted. Sesame oil in Korean cooking always means toasted sesame oil.
I love to watch Mangchi. I wish to make things like Mangchi does but I don’t try all recipes. Just watching Mangchi wash ingredients and pots in itself is relaxing. I still keep drooling over Mangchi’s braised lotus root recipe. I may never make it but the video makes you feel like you want to make it and eat it right away. @@carolblackler9386 It definitely has some spunk to it that's for sure! I find Korean dried pepper flakes and the pepper paste very palatable. It's not like using Italian dried pepper flakes. Those would be much spicier. It's so delicious , so savory and soothing when you eat it. It mellows as you cook everything together. So Yummy!!
@@surfandturfr thank you for that. I just have to find the chilli flakes here where I live. I use the chilli paste in the red tub. My Kimchi doesn't come out as thick, but it sure is yummy 😋🤤😁.

@@carolblackler9386 It definitely has some spunk to it that's for sure! I find Korean dried pepper flakes and the pepper paste very palatable. It's not like using Italian dried pepper flakes. Those would be much spicier. It's so delicious , so savory and soothing when you eat it. It mellows as you cook everything together. So Yummy!!
@@surfandturfr thank you for that. I just have to find the chilli flakes here where I live. I use the chilli paste in the red tub. My Kimchi doesn't come out as thick, but it sure is yummy 😋🤤😁.
