  • Red Beans and Rice (Diri Kole ak Pwa Wouj)
    Ingredients:
    • 1 ½ cups red kidney beans
    • 3 to 4 cups white or yellow rice
    • 2 tbsps. Haitian epis (marinade)
    • ½ white onion chopped
    • 3 to 4 tbsps. olive oil
    • 1 chicken bouillon cube
    • 1 habanero pepper poked with 5 to 6 cloves
    • Handful of parsley tied to 2 to 4 thyme sprigs
    • 5 to 7 garlic cloves minced
    • 6 to 8 cups water
    • 1 tbsp. butter (optional)
    • Salt to taste
    • A few sprinkles of seasoned salt
    *Add 1 cup of rice for every 2 cups of water (1:2 ratio)

    My mom is from Haiti and my dad is from Ghana. I was born n raised in America.:-) My parents aren’t together, but my father enjoyed Haitian food. I can cook both Haitian and Ghanaian food.... I’m am very blessed to have been brought up in 3 different cultural upbringings:-). I love it!!

    I love Haitian food. I am American and its my favorite. I live in Miami in lil Haiti and back in the day you could smell the aroma as you drove or walked down the streets. But now just about all the good restaurants are GONE so I've started to try and cook my own dishes thanks to Utube.. And girl you look wonderful and beautiful 😊. Thank you for sharing some of your culture..

    Thank you for the ratio 4:2. My mom doesn't use measurements, it was hard for her to explain to me the amount of rice to water. That was extremely useful.

    Thanks for this great recipe. Looking forward to your intake on the classic Bouyon (I know, it is common in Haitian cuisine, but any tips and trricks on that classic is something I will carefully listen to). Love Haitian cuisine as it focuses on flavours in a way that (surprisingly) not all cuisines do

      Sis that’s not how it works in the Haitian food culture and that Haitian people don’t make different sauces of Epis and there’s only one way of making Epis and that’s just the way it is and that Haitian people only make three different sauces and first is the Epis and the 2nd one is the Haitian hot sauce and 3rd one is the Haitian Pikliz and that’s it but Epis is not really an sauce sauce because it’s really a handmade seasoning that you put in all of the meats when they cook them and as an young black haitian women and i am honestly telling the truth and that we do use the beans to make the sauce for the rice and we make different type of rice and also when we make Haitian chicken, we have own type of sauce for that and the sauce for the chicken is not really a sauce is just a liquid that came from the chicken that the Haitian people created and that we use that sauce to put on top of the rice whenever Haitian people eat rice But honestly we’re not going to make more sauces that’s just the way our culture is and we have our own thing that we make and just like the Jamaicans have their own thing that they make in their Jamaican food culture.     there's an exception to the rule with rice, yours look parboiled which will need more water, but white rice doesn't need as much water (Please take that into consideration). Yes, please make Jollof rice! You could soak the beans overnight or put them in the pressure cooker which is quick and easy. what happen to the enduit? Durit kole must have enduit unless if your health conscious. Looks good.

      Don’t use can get them in the bag, soak for 30 mins then boil it for 40 mins you don’t want too cook for rice though

    As this is meant to be an instructional video, just some suggestions: Typically this recipe calls for at least 5 whole cloves and Haitian butter Lily. After the water evaporates, remove the parsley, cover the rice with aluminum foil to steam it evenly - and place lid over that. Suggest using a slightly larger pot to boil that volume of beans so you have more leftover water for the rice. Otherwise you’re adding plain water that didn’t boil already. The constant fussing with hair is a bit disturbing when cooking, and certainly in a video for others. Use the spoon to transfer rice to the pot as you’re digging long painted nails into the wet rice - not hygienic. 👍🏼 👍🏼. Just some tips from someone a bit older, whose been cooking Haitian food for 30 yrs. Love that you’re sharing the love of Haitian food to others. ❤️

    Hi I enjoyed your recipe. One of the questions I've always had was in terms of making rice. They always say it's a 2:1 . Meaning for everyone cup of rice is 2 cups of water? And then according to this recipe and then becomes a 4:2 ratio if you're adding and beans? Meaning 4 cups of water for 1 cup of rice plus the beans? I always mess up on rise and I really want to get it. Especially this rice because I love it. Besides my partner hates white rice. Also does it depend on the type of rice that you use? I'm hoping that you can help me with this. Thank you

    I followed this recipe from start to finish. The taste was really good as I didn't really have any haitian epis anymore so I substitute it with Jamaican green seasoning. I also used Adobo for my seasoning. But My rice came out mushy. Idk why but i am assuming its the type of rice I used. I didn't have Jasmine/basmati rice on hand, which is what i usually use and I don't have the haitian dutch pots lol..I will attempt to try again with the proper rice

      It sounds like you used too much water to cook. When adding the rice to the water make sure the water is half an inch above your rice. Then cover and allow it to cook after about ten minutes on medium heat. After this time has passed check your rice if it is cooked, if it is still a little hard add a (little ) more and give it a few more minutes to cook.

    What dry bean cook in 45 mins??🤔🤔 Even if I'm not cooking sous pwa, it takes hours to cook beans until it's soft...!!
