So pleased the hot sugar mixture was added to the yolks to cook them so no need to deny those who should not eat raw egg: the elderly, the very young and those with vulnerable conditions. It looks a great butter cream to use

I love your recipes of course…but my version of French buttercream is with whole eggs…never tried the only yolks version ….gotta try it (｡･ω･｡)
