  • How to Make French Buttercream
    Full Recipe: preppykitchen....
    This creamy, custardy buttercream is made with egg yolks and it's BEYOND delicious!! If you love pastry cream then you basically have to make this immediately! In the video I say it's not appropriate for building a cake with but I think it's totally fine, you just need a lot of it! It does pipe really beautifully so I would say it's perfect for cupcakes or macarons.
    Some Tips and Pointers
    *THE BUTTER!! It has to be soft but not super soft about to melt. When you press into it the butter should yield but only after you apply a bit of pressure.
    *Don't let the sugar go past 240F (115C), if you do things will get chunky.
    When you add the sugar syrup in run the mixer on LOW, you don't want hot sugar splattering all over the place.
    *The recipe doesn't make a huge batch so if you're trying to ice a small cake make a double batch.
    *Because of the yolks this buttercream will never be white, if you need a lighter frosting then try Italian or Swiss meringue buttercream.

      I read that you gotta make sure the mic on your phone and laptop/pc is turned off bc google is listening in on your conversations. Some people have complained that theyve gotten ads regarding things they never actually googled but had talked about in front of their devices 😑

    Thank you for converting it to g and ml because it’s hard to find people who do that and I always have to look up British recipes. Unfortunately there aren’t British recipes for everything so thank you for being considerate and making my life easier!

      Snowdropthewolf you could also look up from cup to gram and then you’ll get a site with the calculator and it says how many grams it is!🙃

    We raise chickens on the west coast of Canada. They are free range plus they get spoiled with organic scraps. Their yolks are a rich orange. Thank you for showing viewers this gorgeous French Buttercream recipe.

    You have changed my life in regards to the buttercreams... I have made Italian several times, the taste is too divine. You really helped me to be brave. I have not made any with chocolate yet. I made roses, too. They were a little harder to make because of all the butter compared to decorator icing, but well worth it in flavor. Thank You!

      Omg I ALWAYS use this recipe for macarons because the whites go into the cookies and the yolks into the filling, so you don't have any leftover egg parts to find a use for.

    I wanted to let you know that I spent roughly 4 hours today making your macarons and French buttercream icing. I watched your two videos about 100 times (maybe I just might be exaggerating, but a LOT) and my Macarons turned out super and the Strawberry french buttercream is divine. My
    Macarons are aging in the fridge right now. I am so excited to try one tomorrow. My only fail is that they aren’t uniform in size. But I matched the pairs up so that at least the cookie halves match 💕😋😘 each other. THANK YOU!!!

I want mine to be lime but I need to know if I can use lime juice and zest without it messing with the consistency. Any help you can provide will be greatly appreciated...

    I always had a difficult time getting a local baker to make this Swiss Meringue Buttercream frosting. They would always make an American Buttercream. Your video help me make this frosting for my wife’s birthday cake. she loved it. Great recipe instruction video. I am tempted to try the French Buttercream. Much appreciated. Thank You.

    Hats off to you Preppy Kitchen. I just finished making a batch of each of your Italian, swiss and French buttercreme recipe. All are beyond heavenly. My first attempt at making my own. I have always bought ready made in store. Nothing compares. I started learning to bake when I watched your video about leveled cakes. Never knew domes were not a natural part of cake baking. I used the homemade version of the strips you taught for my first attempt and I still have the strips I made. I bought the wilton ones and they dry out faster. I have ditched them for the homemade foil ones as I can get the strip to the size of my pan. A pan of water below my baking rack doubly help to seal the moisture in my cakes. I am just a homegrown baker but your lessons make me look very professional. Thank you!
    To any one who has no stand mixer, I made mine using a hand held mixer. Give this a shot and you will be converted!

    I tried your recipe! It worked out wonderfully. I was a little scared when I saw the mixture curdling upon adding the butter cubes but it all magically fell into place, transforming into a smooth, silky, delicious buttercream.

    Hi John. I can't thank you enough for showing us how to make this delicious macaron filling. I also followed your instructions on how to make the macarons. They came out incredibly delicious and in a blink of an eye they were gone. My family didn't even wait for me to put them in the container to hide them in the fridge to sit for a couple of days. Oh well, I guess I have to make more :-)

    I’d never heard of French buttercream before this but I’ve just made a batch and consider me converted.
    I was looking to swap out a custard buttercream in a recipe that I have (basically the regular kind with instant custard powder added) and this is just about perfect.

    It reminds me a lot of the filling in the classic German cake”bienenstich”, or sting of the bee. But, using your recipe which brings the yolks warm enough to (hopefully) kill any salmonella! Thank you thank you!!

    french & swiss are definitely my go to! i usually alternate swss/french bc of the leftover yolks and whites respectively :-) if i dont use the whites and yolks for something else before hand!

    I use french buttercream to layer my cakes and love the taste. I much prefer the taste of French over Italian especially as a macaron filling

    Amazing taste. Today was my first day attempting this deliciousness. I didn't get it perfectly right because most of my sugar got stuck to the mixing bowl but it was still yummy. I piped it in top of you vanilla cupcakes. Omg, how amazing they are! Thank you.

    I live in South east Alaska and I have to pay $10 for a dozen eggs from a free cage grain feed chickens compared to only having to pay $2.99 for a dozen at Safeway 😀 but it is WORTH it! Makes a total difference in my baking my family can tell when I buy store bought eggs 🤪

    John I made your French butter cream. It was amazing. I prefer this over regular butter cream. Tried to frost it for a cake but it didn’t work well so I used whipping cream to frost the cake but I did use it fir inside the cake. Love it!!!

    I love your videos :) They're incredibly helpful. I have a request I was hoping you'd consider: could you make a video comparing different buttercreams in how they taste/how long they last at room temperature, as well as what you personally would recommend? Preferably testing the icing as thick layers used to decorate cakes. I've been asked to make a special cake, (I was thinking maybe cream cheese icing?) and I'm terrified the icing will turn to goop during the event. Online there are many opinions as to which buttercream would be best to recommend, but I trust your opinion so I'd like to ask you for it :)

    I just made this buttercream and it was very simple and held up great on my cupcakes! Please make sure that your butter is not too softened though, it will end up more on the oily side. Thanks John!!

      How do you save your egg yolks? Whenever a recipe calls for just egg whites , after I've separated them, my egg yolks always get a film on top of them. 9 times out of 10 I'm tossing them down the drain. Which I really hate. Any info you can give me on how to keep them good would be greatly appreciated...

    Such a fresh and perfect buttercream, especially with that yellow colour tone. I get sensorial satisfaction from looking at it! I can just imagine how delicious it tastes! I need to make this recipe asap, I always stick to a typical american buttercream because I am lazy (hate to admit it) but this looks like a beautiful buttercream!

    I've never prepared buttercream, it means a lot to succeed when trying for the 1st time.
    Although it was melting after 2 mins 😁 I think because it is summer. Also, next time I will try to cut down the amount of sugar

    My sugar got a wee bit too hot as well and part of the syrup ended up solidifying on the walls of the standing mixer bowl but the egg yolk and syrup blend seemed to turn out alright. Had a great consistency once the butter was added and tasted amazing. Thanks for the recipe!
