50g Salted Salmon Fillet (1.76 oz)
1 tbsp Ikura Shoyu-zuke - salmon roe marinated with soy sauce based seasoning
Toasted Nori Seaweed
1 tbsp Chopped Mitsuba Parsley
Toasted White Sesame Seeds
Wasabi - Japanese Horseradish
Salt
80g Steamed Rice (2.82 oz)
Hojicha - a type of Japanese green tea
Umeboshi Shirasu Takana Chazuke
(serves 1)
½~1 Umeboshi - Pickled Japanese Plum
1 tbsp Shirasu Whitebait
1~2 tbsp Chopped Takana-zuke - pickled takana greens
2 Shiso Leaves
Toasted White Sesame Seeds
80g Steamed Rice (2.82 oz)
Hojicha - a type of Japanese green tea
- Topping Suggestions -
Toasted Tarako - salted Alaska pollock roe
Salted Kombu Seaweed
Ika Shiokara - salted semi-fermented squid
Tsukemono - Japanese pickles
Arare - bite-sized Japanese rice crackers
* If you can't find these toppings in your area, look for savory salted ingredients as substitutes. The upside of sauteing salmon in a pan is that it doesn't give off much smoke and the cleanup is easy. After watching Boungou Stray Dogs anime it reignited my curiosity for eating rice and tea.
Same here! Glad im not the only one.
hahahaha same here
ShadowsandCityLights same

LMAO ME TOO
I love that Ochasuke is considered a snack.
There's just something really nice about that.
hello everyone! i just want to say thank you again for voting for us. our custard pudding video won youtube video awards 2011 japan! chef and i are very very happy! about the toppings for ochazuke, savory salted ingredients usually go great with ochazuke. oh, by the way, ochazuke literally means o (honorific prefixes) + cha (tea) + tsuke (submerge). thank you and good luck in the kitchen.! -francisU^。^U☆
Everyone come to Japan, please! I'd like to make everyone this! This is very good!
:)
I'll hold your words on that until I come someday 😂😂
Which city ? 👍 Doko machi desu kaa ? 😁
you're so sweet^^
that's so kind of you! I'll be sure to remember this when I visit Japan!
Ochazuke is so good. One of those dishes that I try to make sure I have ingredients on hand at all times for. You can keep it simple and just sprinkle some store bought furikake and serve with pickled ume or you can dress it up and make a real meal out of it. I love it with some grilled tofu and sauteed shimeji mushrooms.
It seems that this chef was sick?! Is she better now? Hopefully she's been recovered. Wish her and Francis all the best! Love them both!
I usually use sencha for ochazuke. It perfectly fine with sencha.
This looks amazing. We love ochazuke after a night of drinking, as a snack, or even breakfast! :-)
Everything is done with such precision! Even the salmon that's just going to be ripped apart is handled and cooked with such care.
this show does everything very calculated and precise - it's not one of those cooking shows when everything gets mixed and tossed in the oven. So this is really nice to watch, i mean the food looks so yummy and beautiful!
I am very happy being able to call myself Japanese.. ARIGATO!
This made me want to make ochazuke with nozawana. Right at this very moment, I'm debating whether to make it or not... It's almost 1 am now...
- ngswcook (but fake)
Nozawana hisashiburi! I miss it so much. I loved the nozawana buns in Nozawa-onsen. Delicious and what a beautiful town.
I have been religiously using all of these recipes and every meal turns out amazing!! Thanks for uploading more! I cannot wait to try it! :)
I'm here from bungou stray dogs XD but I was curious on how it's made
Chef get well soon. I watch Cooking With Dog every night before going to bed, even tho I have seen it many times before. Your show always makes me smile. Aloha.
I laughed waaaay too hard at the "This is perfect for after you've been drinking", lol. Best of wishes chef! We're all happy you're recovering so well!
It looks so delicious!
And I am so impressed over Francis, he really has control in the kitchen. :)
This looks like so refreshing, simple, and healthy!

That face she made at the end was so funny. Love these videos.
She IS adorable. Brings smiles :D
This is just what I needed...cooking with dog videos really cheer me up.
I'm Chinese, and we do something similar where we take leftover rice and leftover broth soup and combine it together. My mom liked to eat that when she had an upset tummy.
sucha a classic, i remember having this everyday before school for breakfast, OMG nothing better on a cold early morning
Still looking for this channel for great Japanese recipe... Thank you so much
Awww adorable,Francis with the Macbook
First I was skeptical about 'tea rice'. But when I tried this, it's instant love. My tongue and throat love it. It goes great with any kind of filling, when I don't have time to prepare the topping I use beef floss, and it's still tasted great.
her face at 5:16 is adorable, and francis is like, "you okay?"
Congratulation with the award to both you and Chef !
we love you chef! get well soon! luv to you and your family!
I didn't have any plain green tea so I made the salmon ochazuke with jasmine green tea and it was delicious!
Gracias, buen equipo!
I've been a fan for over a year. Please get better soon!!
Wow I never knew anything like this tea with rice existed. I'm trying to imagine it now, and the tastebuds in my brain don't seem to think it would be a bad flavor together... hmm.. I think I'll try it!
Just look to pass on my best wishes and a speedy recovery to the lovely Chef!
Get well soon!
awww her face when she chokes it's so funny yet so cute, and her laugh after is so cute too *_* I wish I could have her as my grandma :3
Get well soon chef. We miss you alot. I hope you feel better with the little support we can give you!
Congratulations on winning! You deserved it!!!!!!!!!!!!!!!
that dog is well-behaved,
even his mouth was watering as hell, lol
フランシス thank you very much. you can also use green tea instead of hojicha tea. -francis
Wow, so cool! I never knew tea and the rice would work, but this is so cool!
This is absolutely delicious. Since I've discovered it I make it often for myself, very easy to prepare and satisfying.
Just finished watching お茶漬けの味 so I had to just come by and watch Chef prepare some. ^_^
LOVE the ending....very human....something I would do. LOVE this channel!!!
I love how Francis usually hosts the show half asleep.
THAT SHIRT IS SO CUTE!!!
my favorite thing to eat during winter
the dogs reaction to her at the end was so cute:D its like: what happened? u okay?
@beautynscience2010 it's easy to find that type of teapot in japan. it is called "kyusu." i searched kyusu or japanese+teapot at amazon(.)com but they have few of them. if you are in japan, you can even find kyusu at 100 yen shops (99 cnet shops). your local asian or japanese market might have them. thank you! -francis
Sake ochazuke is my favorite Japanese dish! Arigato gozaimasu, Francis and Chef-Lady!
OH MY GOSH. I'm not even lying. I just made some today and was wondering how I could make it better haha

These videos make my day.
I love your vocabulary !
hope you feel better soon you're in my thoughts
Ah, this reminds me of the lovely film Ochazuke no Aji.
Btw, ochazuke is indeed a quick snack - it's usually made with leftover rice, and you can eat it with pretty much any ingredients you have around the house (as long as they're Japanese enough).
love Japanese cuisine
Looks a little to difficult to make at home after drinking but so delicious none the less.
Chef, sorry to hear about the accident. Get well soon!!!
I love tea and rice both
I already ate dinner, but watching this made me hungry again >_
This looks so delicious and healthy!
When I eat chazuke, I always use dried-instant chazuke. (Only to put on rice and pour hot water) So... I have no idea to make chazuke with such a gorgious way. I will try this style, it must be delicious. I feel hungry for this video.
She's so cute!
Never had one in hojicha, sounds delish! *nomnomnom*
try it with Genmaicha!
had umi plum sake (?) i think, it was delicious!!!-i love that you use such tiny amounts and such precise delicate methods
I love Cooking with Dog
Thanks for these videos! I love Japanese food.
