Ochazuke Recipe (Salmon Ikura Chazuke and Umeboshi Shirasu Takana Chazuke) | Cooking with Dog

  • Ochazuke is a light meal made by pouring hot tea over steamed rice. Though you may not be very hungry, ochazuke is very easy to eat. This is the perfect meal after drinking or when you want to grab a quick snack.
    How to Make Ochazuke
    cookingwithdog....
    Salmon Ikura Chazuke
    (serves 1)
    50g Salted Salmon Fillet (1.76 oz)
    1 tbsp Ikura Shoyu-zuke - salmon roe marinated with soy sauce based seasoning
    Toasted Nori Seaweed
    1 tbsp Chopped Mitsuba Parsley
    Toasted White Sesame Seeds
    Wasabi - Japanese Horseradish
    Salt
    80g Steamed Rice (2.82 oz)
    Hojicha - a type of Japanese green tea
    Umeboshi Shirasu Takana Chazuke
    (serves 1)
    ½~1 Umeboshi - Pickled Japanese Plum
    1 tbsp Shirasu Whitebait
    1~2 tbsp Chopped Takana-zuke - pickled takana greens
    2 Shiso Leaves
    Toasted White Sesame Seeds
    80g Steamed Rice (2.82 oz)
    Hojicha - a type of Japanese green tea
    - Topping Suggestions -
    Toasted Tarako - salted Alaska pollock roe
    Salted Kombu Seaweed
    Ika Shiokara - salted semi-fermented squid
    Tsukemono - Japanese pickles
    Arare - bite-sized Japanese rice crackers
    * If you can't find these toppings in your area, look for savory salted ingredients as substitutes. The upside of sauteing salmon in a pan is that it doesn't give off much smoke and the cleanup is easy.     いくら醤油漬け:大1
    焼き海苔:適量
    刻み三つ葉:大1
    炒り白ごま:適量
    わさび

    ご飯:80g
    ほうじ茶
    ●『梅干し・しらす・高菜茶漬け』1人分
    梅干し:1/2〜1個
    しらす:大1
    高菜漬け(漬け物)みじん切り:大1〜2
    大葉:2枚
    炒り白ごま:適量
    ご飯:80g
    ほうじ茶
    他のお茶漬け材料
    焼きたらこ、塩昆布、イカの塩辛、漬け物全般、あられなど

    Ochazuke is so good. One of those dishes that I try to make sure I have ingredients on hand at all times for. You can keep it simple and just sprinkle some store bought furikake and serve with pickled ume or you can dress it up and make a real meal out of it. I love it with some grilled tofu and sauteed shimeji mushrooms.

    I usually use sencha for ochazuke.It perfectly fine with sencha.

    this show does everything very calculated and precise - it's not one of those cooking shows when everything gets mixed and tossed in the oven. So this is really nice to watch, i mean the food looks so yummy and beautiful!

    I'm Chinese, and we do something similar where we take leftover rice and leftover broth soup and combine it together. My mom liked to eat that when she had an upset tummy.

    First I was skeptical about 'tea rice'. But when I tried this, it's instant love. My tongue and throat love it. It goes great with any kind of filling, when I don't have time to prepare the topping I use beef floss, and it's still tasted great.

    Wow I never knew anything like this tea with rice existed. I'm trying to imagine it now, and the tastebuds in my brain don't seem to think it would be a bad flavor together... hmm.. I think I'll try it!

    @beautynscience2010 it's easy to find that type of teapot in japan. it is called "kyusu." i searched kyusu or japanese+teapot at amazon(.)com but they have few of them. if you are in japan, you can even find kyusu at 100 yen shops (99 cnet shops). your local asian or japanese market might have them. thank you! -francis

    Ah, this reminds me of the lovely film Ochazuke no Aji.
    Btw, ochazuke is indeed a quick snack - it's usually made with leftover rice, and you can eat it with pretty much any ingredients you have around the house (as long as they're Japanese enough).

    When I eat chazuke, I always use dried-instant chazuke. (Only to put on rice and pour hot water) So... I have no idea to make chazuke with such a gorgious way. I will try this style, it must be delicious. I feel hungry for this video.
