Yes you can use alternate flours although the texture will vary. You can keep these muffins at room temperature for 2 days after that I keep it refrigerated.
You want to add flax seed powder to replace eggs? Then you can use 1 tbsp of flax seed powder mixed in 2.5 to 3 tbsp water and use this instead of 1 egg.
Why are you adding vinegar to milk? It makes the buttermilk? Never heard of that.... I can buy buttermilk.... is it different? Also, can you add in espresso somehow instead of powdered coffee?
This method of baking making Buttermilk is very common in places where you don't get readymade buttermilk, you can Google and see. If you get ready made buttermilk, you can use that 👍and yes you can use espresso powder 🙂
