Oyster Gratin

INGREDIENTS
4 oysters (with shell for heating)
Flour
1 teaspoon Salad oil
■ White sauce
200 milliliters Milk
1/2 Onion (thinly sliced)
50 grams Shimeji mushrooms
20 grams Butter
1 tablespoon Flour
Salt
Pepper
Mozzarella to top
Parsley to top
PREPARATION
1. Remove the oysters from the shell, put them in salt water, wash them, and wipe them off with kitchen paper. Wash the shells thoroughly.
2. Sprinkle oysters with flour. Put salad oil in a frying pan and heat on medium heat. Add oysters and cook them on both sides. Remove from fire.
3. In the same pan add butter and heat on medium heat. When the butter melts, add onions and fry. When the onions become soft, add shimeji mushrooms and cook further.
4. Add the flour and stir until there are no lumps. Add milk in two portions and mix each time. When it becomes thick, add salt and pepper to taste and remove from fire.
5. Put (2) one by one on the oyster shell and pour the sauce from (4).
6. Sprinkle with mozzarella cheese and bake in the toaster for 5-6 minutes, until the cheese becomes golden brown.
7. Sprinkle with parsley.
8. Enjoy!

I dont really get the point of dredging the oysters in flour first the frying them? Wouldn't frying without it work fine too? I mean you're still putting flour in the onions and mushrooms anyway...
They put flour in onions (and mushrooms) to make it thicken the milk

the flour for the oyster from what I remember is to keep moisture from escaping when you cook the oyster. if you cook it without flour it will shrink much more that that ^^
