Do you know which dry goods may be stored in mason jars with metal tops and which should not? I would assume salt will corrode metal and probably citric acid. What about baking soda, baking powder, etc.?
The only thing I've ever experienced corrosion with is vinegar and some canned meats & tomatoes. Never with dry goods. I don't know if I've just been "lucky" or if corrosion just isn't much of an issue with dry goods?
I buy herbs and spices in bulk and have posted herb blends on my blog. Good for you for teaching so many people. I make several versions of a "Mrs. Dash", with variations. I use that more than any other, although I use Italian blend and Mexican, plus a chili powder which I use a lot. It never occurred to me to make a sausage seasoning. Thanks.
I don't like sausage, but I have a soup that calls for Italian sausage. Instead of using that, I use shredded chicken, and I make a sweet Italian sausage spice mix to add to the soup.

Basil is dehydrated like a vegetable not an herb due to its high oil content. I do 125 F.

I don't measure, but if I had to guess, I'd estimate 3 Tablespoons per pound lb. So happy to hear our videos are helpful! ❤️
