The Ward 8 is a classic drink from way back in 1908, named for the 8th Ward of Boston and created in honor of Ward Boss Martin "the Mahatma" Lomasney. I made this drink and immediately hated it. I had other people in the room try it, reviews were mixed. Frankly, I think it tasted like an old dirty foot. So I remade it and created a drink I call a Ward 8 and A Half. Here's both
Ward 8
.25 oz. or 8 ml. Grenadine
.25 oz. or 8 ml. Orange Juice
.5 oz. or 15 ml. Lemon Juice
2 oz. or 60 ml. Rye
Shake and Pour over big Cube
Top with Seltzer
Garnish with Cherries
Ward 8 and 1/2
.5 oz. or 15 ml. Grenadine
.5 oz. or 15 ml. Lemon Juice
.25 oz. or 8 ml. blood orange
2 oz. or 60 ml. rye
one egg white
dry shake
shake with ice and strain into a coupe
garnish with a line of Angostura Bitters

Hi Greg, I think your specs may have been off, which might explain why you hated the Ward 8. I think it's usually 2oz rye, .5oz lemon juice, .5oz OJ, .5oz grenadine. Give it a shot - might like it better!

I was just about to say, Babish's style would really suit this show well. Make the drink to spec, and then redo with a personal improvised twist using your Bartending/Mixology Experience.

I wonder if the Ward 8 failure was a case of “too much of a good thing” with a dash of too many cooks? That seems like an awful lot of citrus for just the few ounces of rye, so I imagine the citrus notes would be a bit over present. But then the 100 proof, high strength hooch that is Rittenhouse fights back, bringing in spicy, grassy notes that don’t normally play with vast quantities of citrus. Coupled with the acidic, almost bitter bite of the CO2 in the seltzer, and I can see it just being a lot of flavors all fighting each other.

Dude about a year ago I made a Ward 8 for the first time closely following the recipes I could find online.
I had the *exact same* reaction as you. Just this sense of "wtf is this right? Why do people ever like this?"
The drink was so weird it changed the music.

I can believe it Chemistry created a lot of medinincines and alcchol is a disinfectent till someone reslized it's commercial value and bars were created.

No, alcohol has been drunk to become intoxicated likely since before civilisation, we’ve known about what causes disease for a couple of centuries, to the point that the person who is created with the first widespread method of sterilising surgical supplies died in 1912. You’ve got it backwards by several thousand years.

hey Greg: i finally talked to my pals at Ward 8, the bar of the 4th iteration of the 8th WARD building (like a precinct for several districts clumped into 1. Boston has like 22 Wards), the drink was totally created in the Locke-ober (4th oldest American bar, French high-class style). it was created for MM Lomasney who owned the 8th WARD building in the north end.
the drink is about sweetening whiskey with fruit. the way it's served at the Ward 8 bar is different than recipes you'll find in several bars. the only TRUE Boston cocktail, and no one outside of Boston gets it right! HA!
100proof or less Rye Whiskey (preferably less than 100proof) Grenadine, Lemon or Grapefruit, Orange Juice. no garnish. served up, in a coupe.
most bars will use Rittenhouse, but if anything it might be too strong, you can try Putnam but your best bet is probs Bulleit tbh.
When the drink is so bad you have to make your own version!

A dash of orange bitters with/instead of the orange juice could add that flavour, and would work with the extra grenadine well

Honestly now that I think about it orange juice and rye are definitely not made for each other.
I know right? This video is a joke. The dude fuck it up, uses specs that are imbalanced to begin with, and go on to blame the drink. I just made a Ward 8 and it's a surprisingly nice, balanced cocktail, although I used bourbon instead. I did like the fact he remade one that he liked better, although it would have been more interesting if he stayed true to the original ingredients to make a good Ward 8.
@@Bommexx 4 of 4 recipes for "ward 8 recipe" specify to use rye whiskey. So really, you went off spec.

I've had a Ward 8 at the Marliave in Boston. Good enough drink that I tried to make one at home... with results similar to yours. I think it may just be a fussy drink to make.
Honestly, you could have had overripe oranges, they tend to get a bit funky and sour. Also, lots of produce back then were completely different, so it's entirely possible that the drink worked back then and not now.

As far as I know, the purpose of the orange juice would be: old-timey orange juice was more sour and less sweet than it is today. So it would be in a recipe to imbue a tartness.
This is a total shot in the dark but, if he wasn’t fibbing when he said the OJ was fresh squeezed, the OJ might not be the problem. Store bought orange juice is loaded with sugar but if he juiced that himself and didn’t add anything, it should be on par with what was used in the original recipe back in ye olden times. Considering it’s been over a century the oranges have certainly changed and maybe they’re sweeter than they used to be, but I don’t know how much they would alter the drink.
Actually, ye-olden orange juice was probably garbage from concentrate, or powder. Oranges don’t grow in Boston, and the juice needs refrigeration that didn’t exist in 1895
@@glassesguy904 Modern oranges, especially those in the US' food-supply, have absolutely been bred to be sweeter than old-timey oranges, yeah.
IIRC, there is also new evidence that a higher parts-per-million of CO2 in the atmosphere is making most fruits and vegetables produce more sugars within themselves, in addition to the sweetness that has been bred in. Not sure how strong that effect is, but it also exists.

Or just man up and ask for the cherry. I had lunch with a vietnam veteran who was a marine that ordered a shirley temple with a cherry in it. He was a cab driver. I mean if you feel like your macho is taking a hit you could pull a bugs bunny and order it in a dirty glass.

For what it's worth, cherries are the traditional garnish. Also a miniature Boston flag, but that's harder to find.

Maybe remake the drink minus the rye and grenadine, taste, add genadine, taste again - split into two glasses and add different whisky to each to see where the off taste was comming from.

I think the orange was to soften the bite of the lemon, originally...but I really like the blood orange use! What a weird thing to have a drink be so bad you cant drink it!

Our favorite and arguably best local cocktail bar uses one small cube in their dry shake. The cube helps agitation to speed emulsification, and when you no longer hear the cube rattling in the shaker you know you've shaken long enough for full effect. Works great.

I think this was one of the more educational videos you’ve done. Looking at the ingredients and figuring out what is doing what. Not everyone is gonna like the standard ingredients. And to be honest we don’t get enough explanation on what ingredients do or how to change things around.
You should do a series where people post their cocktail ideas and you try it!
I make a cocktail that 2 shots vodka, 1 shot dry gin, 1 shake of bitters, a half shot of simple syrup, and a squeeze of half a lemon, shaken briefly but firmly over ice, poured into a chilled glass, and filled up to the top with a dry apple cider. Its unofficial name is orchard punch. Idk if it's like anything else out there
I did a riff on this myself
.5 oz of orange juice
.5 oz of grenadine
.5 oz of lemon juice
2 dashes of orange bitters
.25 oz of simple syrup
2 oz of bourbon (woodford reserve)
