Yes you can skip butter. ganache will be the same. Only difference will be the shiny texture, butter gives shine to the ganache.
Can we use desi ghee instead of butter?
No, dear, please don't use desi ghee. It has a strong, unpleasant smell that won't complement the taste of the ganache.

It thickens really quickly; when it starts to simmer, it thickens within 3-4 minutes.

1/4 cup cocoa powder
2 tbsp flour
(sifted)
1 cup milk
transfer to saucepan
1/2 cup sugar
medium heat
when thickened turn to low heat
turn off + 2 tbsp butter
let cool
