- Today I am at Singh's Roti Shop to see what goes on behind-the-scenes on a busy Friday evening.
As a foodie, it was a lovely experience to witness all the hardworking cooks doing their daily routine. There were different stations for each type of food. There was a doubles station- the bara was being fried on one side, and the channa was being cooked on the other. Curried meats were being cooked by Sunita, and the West Indian Chinese food cook, Damian, was busy preparing the specials for that night.
In the video, you'll also see there's a roti station. Can I just stay there all day?! It was so therapeutic to watch the ladies as they skillfully made their roti- buss-up-shot/paratha, sada roti and dhalpuri. They also got an order for pepper roti but I didn't want to stay long to get in their way.
Overall, it was amazing to witness everyone working together as a team!

I love Singhs for the Trini Chinese food and for Doubles at 4:30 AM after a long night of Gigs. Thanks for putting this together, staff there is really good and always makes me feel at home.

I ❤ Singhs. I grew up eating their delicious rotis, doubles & dinners. It's one of the few shops I eat at when I come home to visit.

This is a great insight into a very busy kitchen, so much going on. The smells of all the flavours in the kitchen must be fantastic ☺️. I liked the variety of Trini snacks available, and not forgetting the barfi 😋. A great video as always Reshmi into the Trinbagonian cuisine, thank you 👍

I KNEW I saw you in Queens before....I did a lot of Boiler repair work in the Richmond Hill area... I have LIMED at Singhs place(Atlantic and Liberty)many times as well as Sybils....Delicious food at both places....
When I lived there I ate at that restaurant all the time. This family owns another restaurant in Orlando, Florida and now that I live down here I eat at that place too. Love sip dhal in a cup and always ask to give me the hot pepper. I’m Puerto Rican and my husband is Trinidadian and we love mixing food from both our cultures.
Reshmi, I am going to be cooking and trying a lot of recipes this year. I am an old fan of yours looking at this at 3:04 a.m. in Toronto. Excellent video. I know you are in Houston now. Thanks for teaching the diaspora and keeping us in touch with our roots. These videos will be passed down for future generations. When next I go to N.Y., I would like to visit this place. Is it near to a subway? Very professional and well done video.

Wow Singh's is a hive of industry! Nice thin barra, the way you like them. All the food looks so inviting! They must sell a lot of doubles! You can take a Trini away from T&T, but you can't take T&T out of a Trini 🌴🇹🇹😎👍😋

I am from minneasota and I always visit singhs roti shop for breakfast or lunch everytime I visit new york. Everything is special about this place.
Very busy kitchen, and everyone looks like they are really good cooks, they are all bosses in the kitchen. Love it.

This is the only place I buy my Trini food from, I don't care how much tolls I have to pay or how far I have to drive, this has been my spot for donkey years.

Wow love this video, Thank you for sharing it with us! The ladie's are boss in the kitchen, especially the one making the bara and the other one cutting up the chinese style chicken! I would love some of that right now! But unfortunately I live thousands of miles from their roti shop, I would have to make it myself, I wished if I knew the receipe how to make it :(

I've been here numerous times also they do catering and they've never disappointed me before... I live in brooklyn the Caribbean Central but I will travel to Singh's for great food

I think there are a few West Indian restaurants in the UK.
There is a roti shop in Clapham in south London. The nearest tube station is Clapham north on the Northern line.
Yeah there are, but the food never tastes authentic 😕.
Not many Indo Trinis in the UK so thats probably why

Still perfecting my roti making skills following the step by step instructions shown in the video you did with your mum. It's getting better I just haven't got the balance just right when it comes to adding garlic, so it's not so overpowering.
It's not all about the money...(Frankenstein FOODS) You all need to cater a more healthy menu..That DAMN white flour and all that damn grease will kill you...

I think using plastic gloves while cooking in a hot kitchen is very dangerous. It can melt and cause serious injuries. Lots of frying with hot oil, heat and spills..IDK but most chefs stay away from that form....just saying

I remember the first time i went there with a old friend about 4 yrs ago it was a Saturday and the line was out the door. It was the first time i ever had roti and curry goat...I was in love...lol I no longer eat meat and I've been meaning to go back to the veggie castle thats across the street so when i do I'll go into this restaurant and see if they have any vegetarian options
There will be many vegetarian options. You can even get a veggie Roti
