Sweet and savoury surnali recipe | Buttermilk dosa is an authentic South Canara breakfast dish. Usually most people only make sweet version of this dish served with ghee or fresh homemade butter. However, some people don’t prefer sweet dish for breakfast hence the savoury version.

Why buttermilk when we are fermenting again?
Buttermilk makes the dosa softer
Is adding cooking soda a must?
It makes the dosa more fluffy. But, I guess you can skip it.

I followed the recipe..but my batter hasn't fermented...... what to do?
Use sour buttermilk and keep the batter in a warm place to ferment. If the batter doesn't ferment then the dosa will not be fluffy
Koddel, ghasi, ambat difference please
Please correct me if I'm wrong. It depends on the ingredients and tempering. Koddel - garlic phanna, Ambat - onion phanna, ghashi - mustard, curry leaves and hing phanna
