I made this on Saturday, the left over sauce I re-used on Monday for lunch for himself, I added the Chicken Tikka pieces...Think if himself had a diamond big enough it would have been produced. Amazing. Look forward to your take on Butter Chicken. Thanks xx

This was phenomenal!! Much better than any base gravy curry and super easy to make! I’ve literally just finished eating it and I must say you’ve knocked the ball out of the park with this one. Would love to see your take on chicken pakora 👌
I make this at least once a month,my girlfriend doesnt like it too hot,when we go for an indian she gets a korma,🙄🙄 so dont add too many spices,i put hers out & then i had some boiling hot spice & more garlic for me & we,re both happy,stunning curry. 👌👌❤️❤️

We have just made this made a few tweaks but it was incredible the flavours in there was beautiful definitely better then takeaway standard you nailed it

i am impressed by the colour and texture. there wasn't enough of layering of flavours or sufficient cooking processes for the flavours to fuse better or the use of commercial packet madras curry powder (you would roast, grind and blend your own fresh spices) for it to be a traditional authentic curry, nor do we use certain things in a madras such as coconut milk. but i still want to try this recipe. other people's take on our own dishes can sometimes be better than the original thing.
What would you add to this recipe spice wise? I found when bringing a bite to your mouth on the nose you could still smell tomato I'd like to try to eliminate that. any thoughtS?
Once upon a time, the Madras Curry was on original dish now, sadly any generic curry passes off for a Madras Curry. The Madras Curry along with the Mulligatawny Soup recipe was one of the earliest Anglo-Indian dishes, prepared for the British when they settled in Madras. Madras was one of the earliest British Settlements in India established in 1641. The Curry was initially almost always prepared with goat or lamb. For a long time, it had a standard recipe then with the surge of takeaways and Bangladeshi restaurants in Britain it became just any curry. There are very few Madras Curries on UA-cam the come close to what it originally was. The Omnivore Indian posted one such recipe.
Max, you are pretty much spot on. Unfortunately a lot of westerners ( specifically UK as my experience is based here) are deprived of the actual flavours and have been passed on artificially coloured spicy or sweet chicken mess as an authentic curry. If you go to Madras ( Chennai) and ask for a Madras curry they will look at you as if they’ve seen a zombie or will present a full flavour chicken curry which is nothing like this. This is a generic chicken curry with preservatives. Sorry it’s not me typing, it’s my Chivas tonight 😃😃

Hi, I tried the chicken madras for the first time yesterday and it was absolutely beautiful. The family could not get enough of it. They asked if I could make the sauce just a little more juicy/runny. I was thinking of adding a tin of chopped tomatoes and maybe a little water. Is this something you would recommend or do you have a preferred method. I just thought I had not used any coconut milk. Would this have made the difference??Thank you Lynda

Always end a tomato based curry with a teaspoon or two of garam masala just before serving... Or always use fresh ripe tomatoes instead of canned tomatoes or passata, never use passata in a curry it's far too tomatoey
It looks fantastic!!👌 I'm looking at all these recipes and other then the Corma looks like all the curries are the same somehow.... Tikka masala butter chicken jalfrezi etc they are all the same. So I wonder....why do they have a different name?🤔 Maybe it differs from region to region?

The Omnivore Indian recipe isn't drastically different, the main difference being the use of fresh and toasted spices instead of the pre-made powders.

Ground fenugreek is available in most large supermarkets as is tamarind paste. 🙂👍
