  • Sooooo, I know I've been mia for the past couple weeks....... Hope you guys will forgive me :D. Omg, you guys, i found a new obsession for sponge cake. It's light, moist and fluffy. I don't think any words can better explain it than watching me eating it. Don't be jealous. GO TO THE KITCHEN and MAKE THIS! Thank me later 😉
    Recipe:
    Butter 60g ( ¼ cup+ 1 tsp)
    Milk 60g (1/4 cup)
    AP Flour 60g (1/3 cup + 1 tbsp)
    Sugar 85g (1/3 cup + 1 tbsp)
    5 eggs yolk + 1 whole egg
    5 egg whites
    Vanilla Extract 1 tsp (Optional)

    Add 1/2 tsp of cream of tartar to stabilize the egg whites. This will help keep the roll from deflating once you roll it. Also, lightly butter the pan before you put the parchment paper in it. I just take a stick of butter from the fridge and run it over the pan. Then press the parchment paper into the pan. This will help the paper lay flat on the bottom and sides. So you wont get the odd shaped cake edges. I've found that I get less cracks in my cake if I roll it while it is still warm instead of all the way cool.

    thanks for this recipe. it's really good. I baked it for my mum's birthday yesterday. I had whipped cream with Oreo crushed as filling. it's so yummy. My visitors thought was store bought!I can't insert a photo here, otherwise will show u !

    i think its easier if you fold it while its warm and then let cool completely unroll it spread the filling and roll it again and slice.

    I tried this today! I was having doubts about the recipe when my mixture turned out too watery after adding the egg yolks compared to what I saw in the video. I added more flour but the mixture was still watery so I just used it as it is. After following the rest of the procedure, it was even more watery and thus I just left it as I'm a baking newbie and didn't know how to fix it. I baked it at 170 degree Celcius for 25 minutes and turned it down to 150 at the last 5 minutes because I was afraid I will burn it. I monitored it constantly and even took it out to poke a chopstick through it to see if it was cooked! It turned out well and the colour made it look good! It tastes good too except that it wasn't sweet and tastes a lot like egg(not surprised considering the amount of eggs used haha) I spread chocolate sauce on it and rolled it up and it tastes really good!! A simple and easy recipe I would say!

      If the mixture was too watery, perhaps your flour was not cooked. It has to be added as soon as you removed the butter and milk mixture from the heat. Basically you make a roux first and then add the egg white.

    Each time I make a swirl cake , I always use ur recipe for the cake batter and it always comes out perfectly soft and tasty 😍 (even though it flattens Down when cooled but it's perfect)

    I just made it today. it is very soft and fluffy! I made cupcakes instead but they shrinked a lot! and yes it tastes like eggs, so much like the Chinese sponge cupcake

    Hi Mi! Thanks for the tutorial, glad you're back! Can you please specify the size of the eggs? Although I've used L size and have got the batter too runny, not like yours in the video.       Well I think the concept was just showing us how to make the cake. As the instructor stated, she likes to top it with cream and fresh berries, thusforth restated the fact that we can top it however we would like. (i'm putting cream in the middle as well)

    I like that you used 9x13 pan! Generally i find recipes that use jelly roll pans or cookie sheets with all different dimensions. Also would it work if rolled up when its still warm?

    I just found this recipe again that I used to use like 3 years ago and i'm planning to make it for my boyfriend for Valentines day. This is so delicious and soft >w< its soooo good ughhh. Anyways... so after waiting for it to chill in the fridge I take it out, carefully open it a little, while it's still rolled and I spread some whipped cream and add strawberry slices. It tastes so good and when you cut it into slices, you can see the strawberries that swirl around the cake ;)

    to prevent it from deflating (coz my country is hot and humid) put some cream of tartar while mixing the egg whites.

      I’m from warm country too but it is not necessary to add tartar cream, the cake will not got deflating without tartar powder, it is still spongy and fluffy, I just baked one today, I applied the same amount of ingredients, the result is so soft and delicious, much better than those commercial cakes

    If Im not mistaken the extra egg was not used, just the 5 white and 5 yolks. I'll try it like that, last time i think I cooked my eggs when adding them to my butter, flour, milk mixture.

    I suggest just pulling the cake out of the pan by lifting it up by the excess parchment paper and transferring it onto the cooling rack instead of flipping it over twice, if that makes sense. :)

    i have a hand whisk... i dont have a mixture... so how many mins shall I whisk the whites of egg?? or should I have to add any extra like lemon?

      Yes, you can use a wire whisk. You must add the sugar gradually until your egg mixture becomes fluffy. And also make sure that there is no drop of water in your mixing bowl so that it will aerate.
