  • This is a recipe that I adapted off a blog. Sugar lace is so popular and trendy at the moment that I could not resist feeling inspired and wanting to share what worked so well for me :)
    I did forget to mention in the video that the amount of water will affect how firm/brittle or pliable your Sugar lace will dry - please watch part two Video on how to dry it and use a silicone mat to create beautiful edible lace.
    Here are my metric measurements:
    125ml water
    10ml tylose powder
    15ml icing sugar
    30ml corn flour
    2,5ml meringue powder
    5ml liquid glucose
    2ml glycerine
    * A teaspoon being 5ml

    No one in this area does sugar lace. I have been using Sugar Veil for around 5 or 6 years but it can be a bit $$ and it brings my blood pressue up when it sticks to itself. This has such a great finish and cuts nice on the cake. I did make a few domes and baskets by placing a cut out lace flower design in a cupcake tin and putting it in the oven at 100 degrees F for about two hours, then turned the oven off and just left the light on with the tins inside until it cooled . When I removed them they we dry and a bit brittle but not fragile. Made beautiful little umbrellas and domes to place atop iced cupcakes. I also used my airbrush to give them colors and glimmer. I was very light handed but It worked well. Thank you so very much. I am just recovering from months of chemo after breast cancer and is post gave me the incentive to become creataive again. I sincerely thank you from the bottom of my heart.

    I have watched this video about 100 times and read the comments before attempting this.
    I am from Trinidad and I couldnt seem to find meringue powder so I omitted it and did everything else and I used liquid food colour. IT WORKED!
    The weather here is hot during the day and just after four hours it dried and i could take them out. I have them on a paper towel here staring in amazement.

      +Shaliza Mohammed You can get the Meringue Powder in Ocazio. It's upstairs Bradford Mall in Port of Spain. How did you put it to dry?

      +Khadijah Prince I left the first one out when the weather was nice and hot and it dried well. They weather wasnt so nice when i needed to make more so i put it in the oven on the lowest temp with the oven door ajar since i have a gas oven. The finer lace patterns were still sticky and wasnt coming out as well but the larger lace patterns it worked well. I think it would dry better if you use the meringue powder in it. And it was flexible even a week after.

      I just made it but didn't have the meringue powder but it does work better since the powder will help the drying process. The weather has been really hot these days so hopefully it'll dry

    Hi there, thanks a bunch for your recipe of sugar lace. Yours is the first one I tried, and though the lace came out perfect without any breakage, it was a bit to dry and brittle for me to work with :-( But I tweaked the recipe a bit and the lace came out white without adding any white color, soft, pliable and it also dried sooner! Here's my version, do give it a try and let me know your thoughts :-)
    1 tbsp Tylose powder
    1/2 cup plus 2 tbsp boiling water
    1/4 cup confectioners sugar
    1tbsp meringue powder
    2tbsp cornstarch
    2 tsp corn syrup/glycerine

      Shannon Coburn I would add both, glucose or corn syrup and glycerine.

    I was a bit reluctant to try this because my previous attempts at making flower paste have not gone very well & I was going to cop out and buy ready made sugar lace!! In the end though I decided to give it a go and was really pleased with the result. So quick and easy to make! Not as fluid as yours but result was great. Thanks for your help ;o)

    i've tried the lace numerous times now, and I cannot use CMC. It makes it so thick. I can use tylose with no problem, but the CMC makes it super thick to where it's almost a solid lump, and I haven't adjusted the recipe. Just thought I'd mention this incase anybody is having issues with it being too thick. But love this recipe!

      thats odd. I used cmc and i keep double checking the water as mine is so runny! In the oven right now so hoping for the best. mine is definitely on the runny side...

      this is due to cmc and tylose have different strenghts

    Is Wilton Gum-Tex Tylose Powder the same as the Tylose Powder you used in this video? The ingredients listed on the can is just cellouse gum.

    That should be the same, yes, as tylose and cmc are both cellulose powder

    if i have "royal icing mix", can i use that in the place of the powdered sugar, corn starch and meringue?

      Sugar Tree Cakerie well you have made my caking life! I cannot believe how easy it was, and how much it feels like material. I've even thought of my daughters birthday, with cupcake toppers, and matching table runners made of edible sugar lace. lol. My daughter said it tastes like paper.. so I asked her how much paper she's been eating. hahahaha. anyway, cheers... Love it :)

      It is just a fail safe. The lace will work without it but it is a bit better and more pliable with glycerine.

    do have to spray the silicone with oil before applying the sugar lace every thime? on the vidio i didnt see

      Hi
      Just a little bit- not so much that it forms "puddles" so to speak. Keep the bottle far above the mat and give a quick spray. Lustre dust or pearl dust should act as release too if dusted in your mould before applying the mix ;)

    In your "latest adaptation" measurements you list the amount of meringue powder as being 2,5. Did you type a comma instead of a period by mistake, meaning 2.5? Or do you mean you can use 2 to 5 ml. depending on consistency?

      +WhichWaysThisWay In our country the decimal is used to separate numbers so 2.5/2,5ml , not 2-5ml :)

    Hello, I have to questions, can I use regular or boiled water instead distilled ? and this sugar lace is elastic enough to work? I been using sugar dress Martellato of course EXpensive but really good much better the sugarveil which breaks easy.

      +Marcella J. Boiled water that has cooled is fine, it is elastic with the addition of glycerine (2ml)

    Hi, sorry if this has already been asked. But I'm wondering about coloring the paste, esp black. With the more gel color, will I need to use less water?.. Or will it not effect the texture or use of it in any way? Thank u!!!

      +MsHalabaloo It takes the colour very easily though so you shouldn't have to add too much :)

    Hello thank you for the video tutorial is great ..I am making at this moment but seems like 1 table spoon tylo makes very lumpy very thick consistency so i took away half of the mixture and continue what its left in the bowl and after added almost 1 more cup of water on the top of the mixture and now i ve very smooth texture .water was boiled water but it was a bit warm.Do you think it could cause the problem ?thanks again for your time and effort x

      I think the temperature might affect it yes, I advise cool water as putting too much will make it dry too brittle ;)

      Sorry, replied on the other one. Best to make it all and store the lace in a sealed bag( the mix should keep in the fridge for 3 days- remix before use) the made lace will store for up to a month ;)

      Thank you so much for sharing your recipe. I tried it and it worked beautifully. I didn't bake it in the oven and it still dried, I added liquid glucose and glycerine to the mixture, one week later my lace is still flexible. 😊

    Hi. Did I do something wrong ? When mixing the tylo powder with 1/2 cup water, mine was so lumpy, although it went clear it was not liquid. Therefore I had to keep adding water. Until I reached an approximate of what the video looked like.

      Tylose strength can differ around the world/suppliers. Just try it with less next time;)

    Does using more water make it more pliable please? Does it stay pliable or does it eventually go brittle?

      Hi, adding some glycerine should make it more pliable. More water can cause it to go brittle yes, less water should improve the elasticity, between 1/4cup and 1/2 cup (would not add more than that) hope it helps :)

    Hi there, I made this recipe and it came out so dry that when I tried to pull it out of the silicone it cracked. It also took really long to dry and was not pliable at all. Any idea what I may have come up short on should still add?? Pls let me know and thank u!

    I have a question, I have seen some of these lace shows on here and some of them heat the silicone mat at 175 dg for 10 to 20 mins. Does this need to go in the oven to warm? Can I use Fondant to lace, I have tried and it didnt work to well.

      The mat does not need to be heated before hand, but once you have applied the mixture , it needs to be oven dried a little in the mat to be able to remove it within 10/20min (after its cooled) ;)

    Hi I have question I used exactly your recipe ,but turned dry and britteled I don't know what can I do. I dried overnight and in oven still the result was same. I will appreciate if u can help me.

      Mina Zare did you add any glycerine at all? 2ml glycerine will help with the elasticity. And liquid glucose gives a stretch usually so it is strange that it goes brittle, I have some made 4 weeks ago thats still flexible

      You can keep them for up to 3 weeks when its made- just store it in a sealed ziplock bag, if you add glycerine for elasticity, make a small whole in the bag as moisture might accumulate in some humid areas. Glycerine(2ml) will keep it pliable and prevent it from going brittle

    Hi there. I have tried this and similar recipes and I can not understand why my product more turns out like a wet dough more than that runny batter you have there. My only differences are that I use potato starch instead of corn starch and no meringue powder. However, as soon as I mix the water and glycose it creates small clusters of dough rather than a smooth gelatine-like consistency. Do you know what may be the problem?

      *edit: as soon as I mix the water and TYLOSE of course....

      You have to mix it until all the granules are dissolved and use cooled distilled water. It could also be your grade of tylose that is very strong, try to use a little less next time perhaps :) I haven't tried potato starch though so cant really advise how it would affect it but its interesting and I would like to try it, will update if I do at some point :)

      You can cover it with a damp cloth in between uses, and then in a sealed tub in the fridge for 3 days ;)

      Hi there, I purchased it locally but searching online to find a supplier or ordering online should work too ;) Its called a silicone sugar lace mat 👍 (some brands also sell it like sugarveil etc)

      Hi, I think that might be your local brand name for tylose, yes, as long as its plant cellulose it should be the same;)

      Hi, the measurements I used in metric was in ml. 5ml for a teaspoon and 15ml for tablespoon;)

      You can Leave the Meringue powder out( or replace with egg white 10ml) but the cmc is a crucial part to make it set unfortunately.

      cmc has different strengths so just play around with it and experiment a bit. use less if it is too thick

      try adding a little bit of glycerine or water :) just not tooo much, start with a few drops

      Hi there :) No, the water must be boiled but cooled or used at room temp or distilled water can replace it

      Only those two will work, I haven't tried Dyocell(another type) yet, maybe try to research that locally or perhaps try a gelatin lace version ;)

    :( I should have read through comments first. Used the amounts in the video and ended up with a tight blob, started adding water to it and I'm guessing 3/4C more. Still seems too tight to spread.

      I've done more reading online about this recipe. 2 things I've discovered...1 quality of tylose seems to be a huge factor. I'm going to only use 1/2T next time. 2, not sure if the Distilled water should be boiling hot or at room temp. People swear by each method but again quality of Tylose would come into play here. Your thoughts would be appreciated! 😄

      Almost a full cup of water and more glycerine before it was spendable. I'm wondering if it shouldn't be 1 teaspoon not table

    Hi i tried it and baked it in oven at 120 temp fr 8 min and flames both sides but it turned brittle.and broke :( can u tell me where i might be lacking?

      Aalya rai 120 is way too high

      the temp should barely be on if on at all, it mainly uses the fan and oven light to help dry it out faster. not actual heat

      Thank you for the feedback, however, please try to watch our tutorials using a proper connection so the data speed of your network does not automatically reduce the quality. It is recorded in high definition but will load at a lower speed using a cellular network, we recommend wifi connections for high data speed so that the video quality is not automatically reduced by youtube for your device and all text can be seen clearly ;) I will also add the quantities in the recipe description - happy baking :)
