    We changed it up a bit this week and after a ton of request, we decide to take a closer look at our Outlaw BBQ Smokers. These pits have a lot to offer and cook like a dream.
    These pits are built in Mentone, IN with a lot of blood, sweat, and tears. I have had the pleasure of making several trips to the shop and seen how these pits are built. Each pit is hand built and welded with no grinder in sight! All the welds show the time and skill each pit builder has and these are a work of art!     Hey Mark, can we get a fire management video for an offset? It's one of the things a lot of people struggle with when it comes to offsets. How to get that clean smoke and what to do if you're billowing white smoke

    Hey Mark, so in terms of spending a bunch of money on my LSG the discussion I had with my wife went like this: "So how many of those $1000 phones do you think you will go through in the next 10 years?" She couldn't even argue after that! Now Mark, I see you certainly have an angel that works for you, but that argument may help someone else! Stay safe.

      No. These pits do not have hot spots. No baffles needed.

    how do you get clean smoke running your intake vent that much closed?

      It’s all about air flow. The stack basically sucks as much air as it needs. Even with the vent barely open it’s still allows a ton of air to be drawn through it at a higher velocity. If that makes since.

    Thanks for the walkthrough. How does the finish coat hold up? Is it easy to maintain? Any known issues?

      Both pits in the video were the older style. The new ones are all powder coated and hold up amazing! Easy to clean and slick finish.

    What kind of paint is used to give these smokers a glossy, shiny look?
    The high temp paint I have seen makes it look like a dull black. Nothing like these pits. I can't find any video talking about it.

      They use several different paints and powder coats. I wipe them down pretty regular with WD-40 to keep them shining maintain the new finish.

    How does it keep your sauces warm on top if it’s insulated 2””. You should be able to touch it.

      Basically because after the first hour or so the heat is being radiated through the metal since it is all welded together. Over time it has no choice but to get warm no matter how much insulation is there.

      Compared to other stick burners, I have nothing bad to say at all. These pits honestly are some of the smoothest running pits I have cooked on. Now if your coming from a pellet grill or something with temp control, you just have to remember to add a split about every 45 minutes to an hour and learn the air flow.

    Do you think this is a better option for a backyard patio compared to the Backwoods G2 Chubby smoker or a Shirley Fabrication Patio smoker?

      I prefer a dry cooker over a water cooker such as the backwoods. Just because they are easier to maintain and easier to build bark with. I do not have any experience with Shirley Fab other than the work looks top notch. Its all in personal preference. I do love my Outlaws!!

    Regarding the firebox of the patio model, can the fire basket be pushed to one side allowing room for a split to sit beside basket to preheat before adding it to the basket? I like to preheat the split that is “on deck.”

    Mark. These pits are awesome. How does that stainless top get hot if the firebox is insulated? Just curious. Keep up the great content.

      The fire box still gets pretty warm and transfers to the top. It is insulated but it’s a pretty good fire kicking in the box. Thanks!

    Mark I got a question for you. If you were cooking on the hybrid model you showed there the one with two doors, and you were just doing a single brisket, would you put it behind the door closer to the firebox or the door closer to the smokestack? Or do you think it matters?

      With how even the heat is I really don’t think it will matter but I do find myself cooking behind the left hand side door closest to the exhaust stack.

    I just stumbled on to these pits, there is not a ton of reviews out there on them as of yet. How do they do in cold weather? I live in upstate, NY, and for a solid 6 months out of the year, it is less than ideal cooking conditions. I'm that guy who loves to cook year round and am looking for a pit that will hold temp even when it is snowing and blowing. Thanks for your time.

      I have cooked on the outlaw in windy below freezing temps with no issues what so ever. It’s actually cooks better the colder I think.

    nice video showing the features of each. One thing I am wondering is why do you control the temps with the exhaust with an Outlaw pit whereas most other stick burners promote wide open intake and exhaust and control the temps with the size of the fire? Outlaw is a top flow stick burner, right?...is that why?

      Im no scientist but from what I found and noticed there are multiple answers to that question. One being, a pit with an insulated fire box is more efficient and therefore requiring a much small fire. By using the vents to help control temp, you are also controlling the convection/air flow across the meat.
      Something else to think about is when a pit us being ran with vents wide open or fire box door wide open, you are giving the fire more oxygen that is actually needed. Therefore the cooler air that is not being used by the fire is getting sucked through the cook chamber and mixing with the hot air from the fire. This in my opinion is why the larger stick burners do so well with open intake and exhaust. You can build a bigger fire that what is needed and the cool are mixes with the hot air and lowers your pit temp. Which also makes fire management easier since you can build a larger fire but maintain good temps.
      So long story short, with a smaller pit air flow does more than just control temp. I can actually control the bark and color by slowing the air down but still maintaining the same temp.

    Great video Mark, after seeing your video for the first time about a week ago I placed an order for the patio model Monday. Looking forward to trying my first brisket but with this outlaw what do you recommend fat side up or down?

      Awesome!! I have only cooked them fat side down and they turned out great! I have a brisket in the fridge that will get the fat side up treatment soon. I say go with what you more comfortable with. It’s a win win either way!!

      My local ace hardware has a huge grilling section, they have bags of grilling logs in every species you could want, cherry, hickory, apple etc.

    Is the stack removable on the patio model? And did it come with the steering handle? I don't see it shown on all the photos on their site.

      Yes, the stack is held on with 4 allen head screws. Really easy to take off. And Yes, it does come with the handle to pull and steer with. It works really well and is fairly easy to move considering its weight. Appreciate the support!

    How is tin if that is 2” thick With insulation it will heat you’re bbq Sauce on top of the fire box

      You still have a good about if heat transfer even with insulation. You not gonna boil water or anything on top of the fire box. It just keeps it warm. Unlike an uninsulated that will get 500 plus degrees on the outside.

      Swine Life BBQ yeah that’s pretty good. One of the offsets we’ve used in the past took 3 splits every 45 minutes to maintain 275 lol it was a pretty big pit, but still that’s a lot of wood!

    Hey Mark. How do they keep such a uniform heat across the cook chamber? I would think that you would have hot spot just after the firebox.

      Its all in the air flow. From what I have noticed, the majority of your heat is at the top of the cook chamber and is not at the grate level with the food. Of course if you put a Boston but or shoulder right at the fire box it may get a little more color sooner but still very consistent cook across the entire cook area.

    The elephant in the room is FLOW. these pits and this guy are directly contradicting Aaron Franklin and his pits. What's the real deal?? I feel like construction on these pits is great - but flow isn't optimal.

      I have never cooked on a Franklin pit but would love to! The Real Deal is these pits cook like a dream and have great air flow as I am sure a Franklin Pit does too. Did you have issues with flow when you cooked on an Outlaw?

      @@SwineLifeBBQ How hot can you get this pit? Just curious for say reverse searing a rib roast or something like that. I looked at one the other day and I was wondering why they didnt go with at least 1/4" steel? The door seemed kind of thin. Thanks

      @@mattsmith9270 as hot as you would like. I have had it 400-500 pretty easy and actually seared a beef loin. I have a video of that as well. It’s a beef tenderloin video.
