He has a great, fun vibe; but you can tell he takes his work seriously. Lightly dusting fresh grated wasabi off into that bowl of noodles and then seeing it made my mouth water. His dishes look simple, but there's an elegance to them. Just amazing.
I think that's grated yuzu rind. Wasabi would look very wet and mushy by comparison.
Some of the Sushi chefs I see in youtube videos intimidate me, they seem so stoic, so traditional and refined to the point of being just a tad scary- but this fellow gives off such a friendly warmth! I would not be too intimidated or scared to eat at this chef's restaurant, he seems like such a kind person and yet also very professional.
Yeah, he's actually good for the hospitality industry.
Like if he were a bartender, you'd definitely be more likely to be a regular in that bar. If he ran an izakaya, where he was cooking and talking to customers, he'd have a long line of regulars.
Maybe because
I love listening to him.
I love watching him preparing his unique dishes.
As he grows older, his personally and stories are forever memorable.
“They say Kyoto is traditional ...
But look at me”
LMFAO 😂😂😂 you’re a effing star mate
an*
His voice's so soothing for grandpas telling his gdandchild some legendary stories
5:24 “kind of sad about eating your pet fish after it grows up”
5:26 **evil laugh**
Watch out Mr Whiskers, I've got my eyes on you.

Ate here back in February on a weekend trip to LA. Great meal, friendly chef, and relaxed atmosphere.
Dude is a LA legend! I found out about him a few year ago through munchies. His birthday vlog was the best
He looks like a gangster turned Japanese chef.
Guess it’s opposite
Yoya San- one of the coolest ever! So much love and respect for this man.
Yoya is like one of the coolest dudes! His friendly and joking personality remind me a LOT of Miyavi. Like they could be cut from the same stone. I think they're both so cool.
I love his energy
6:49 just hearing the tattoo explanation, I’m guilty of “just getting a tattoo”😂😂💯

The more you shake...the lucky you are.. that there made my day!
I stayed a week in Kyoto and then a week in Osaka. Let me tell you that regardless of how close together they are, they are waaaay different. He's entirely not lying. Lmao.

He's awesome! Also I don't know why he spoke in Japanese so much because his English is actually very good albeit hard to understand without the subtitles just due to his accent. Cool dude for sure and his food looks delicious.
Mike O'Barr japanese culture bro they can speak Eng but respect their mother language, so we all have subtitle
“Zero star...minutes zero star or something”

Master of his craft. What an impressive spread.
津本式やってらっしゃるんですね、すばらしい。
魚の血生臭さを取りつつ魚本来の美味しさが引き立ちますね。
主人からの魚料理へのこだわりが見えますね。

Feel like i have grown up with this guy after seeing multiple videos of him
This food looks amazing
lmao the hammer tattoo was the best part !
I would love to go to that restaurant and chat and laugh with him!
Everytime I see sushi chefs introducing the fish, I'm always like do I need a phD in marine biology to become a sushi chef?😂
He Zhang
Probably.
I mean don't they also deal with poisonous fish and different recipes also so maybe you do need to know your fish first
The first "Happy Sushi Maker" i saw.. 😊😀😄😃😆😂🤣

The Tsumoto method is a technique that is starting to become the standard in Japan, starting with UA-cam, and it greatly improves the taste of fresh fish.
Immediately after the fish is brought ashore, the guts and blood, which are prone to decomposition and oxidation, must be removed as soon as possible.
By completely draining the blood from the fish, the flavorful ingredients remain in the fish's muscles, which greatly improves the taste of the fish for sushi.
How the atmosphere changes on 8:04 wow, we're in for some treats!
This guy is in 9/10 sushi videos I've seen
HE....is AWESOME!!!
I wanna share a beer with this man.
4:23 man, that story made me sad lol
glad he's thriving now!
He resembles Gorobei in Seven Samurai classic film haha.
A bit goofy too and good vibes.
Naisu vid!
Fascinating man and video Thank you

God i miss Japan........

你从洛杉矶还是那里来纽约看👀我有心了,做寿司还要向你学习,如果有幸请多多指教。。
man that meaning behind the tatto on his hand tho
for real tho
Feel like i should get a similair tattoo since i shake that hand quite often.
@@HerstalP90 Since every shake is good luck then your dreams are about to come true!
Andy Daniel he means fapping
Other japanese chefs have the aura of a samurai master while this guy is chill
I wish he was my grandpa so he can make me as many sushi as i want.
I still think he could make it as an actor. He has a great on camera presence. I say he could start as a gang leader for Yakuza in a John wick like film.
Your best series. Thank you the Eater team ✨
I should go to Japan and open up a Texas bbq joint .
AMAZING
He's such a beautiful man.

Japanese language is useful, and a relatively easy language to pick up the basics, I would suggest to learn the basics of Japanese to visit Japan during ur lifetime at least once, Japan is a beautiful, safe, clean, orderly and welcoming place for all visitors..
6:58 anyone noticed that little laugh ?
7:18 and that smiley tattoo?!
