Brisket Tellicherry Pepper Grind, B & B Texas Post Oak Pellets, Beef Tallow Timberline Traeger

  • (see update on Traeger issues below) Texas Brisket on a Pellet Grill...I used fresh ground Tellicherry Peppercorns and B & B Post Oak Pellets...I also used Beef Tallow as a binder for my 50/50 Kosher Coarser Salt and my 16 mesh grind Pepper, I used a Traeger Timberline 850 which did have a few issues during the cook that I ended up contacting Traeger who had some steps I hadn't tried to get it fixed...I hope lol... it's my son's grill that he bought used a few days ago and he hasn't even cooked on it yet...so I hope it is fixed. Thanks for looking!
    UPDATE ON TRAEGER SHUTTING DOWN ISSUES...I COOKED 2 BOSTON BUTTS ON IT THE FOLLOWING SATURDAY, IT WAS AN 18 HOUR COOK AND THE TRAEGER RAN PERFECTLY!

    Those packer briskets from Costco are so good. The point just melts in your mouth. Thanks for the info on the B&B post oak pellets. Been looking for post oak pellets and looks like I can find these locally.
    For the grill, what probably happened was a "flame-out." This is a problem with Traegers and it happens when the auger pumps too many pellets for the heating element to handle. The flame goes out and you get a heavy white smoke because it is starved for air. The grill can't control the temp and eventually gives up. I have this happen all the time with mine and I have two solutions.
    1. Make the grill go through shutdown. This turns off the auger and will burn off whatever pellets are in the fire pot. Usually takes about five minutes. Then I start the grill back up with my set temperature.
    2. The fire is starved for air with that much fuel in the fire pot. I have a small handheld air blower that I use to get more air under the grease tray. Do this carefully as you can blow hot ash all over the place. You can hear when the fire restarts and the cook will recover.

    Your brisket looked great.
    I really like your BBQ channel even more than your indoor channel. I especially like your sincerity.
    Many UA-camrs get a free device and brag about how good it is without getting into the bad. Similar to the Weber SmokeFire rollout which misled a lot of people into buying a grill with numerous design flaws.

    John, another great video!
    In my limited experience with a Traeger, the food came out perfectly cooked, but didn't taste "grilled" Edit: or "smoked". It tasted like it came out of the oven, even with flavored pellets. What has been your impression?
