🍳 INGREDIENTS 🍳
ripe bananas 3 (600 g with peel, 400 g of pulp)
flour 260 g
sugar 150 g
honey 20 g
yeast 16g
bicarbonate 1 g
salt up to 1 g
ground cinnamon 1 teaspoon (about 1 g)
walnuts (even pecans) coarsely chopped 100 g
medium eggs 3
melted butter 115 g (or same weight of sunflower oil)
vanilla 1 pod
chocolate chips (optional) 100 g
TO GARNISH
not too ripe bananas 2 very thin slices
lemon juice to taste
apricot jam 1 tsp
🍳 PREPARATION 🍳
00:00 - This recipe is as simple as it is yummy. Coarsely chop the walnuts and keep them aside.
00:32 - Peel the bananas and puree them, keep these aside too.
01:16 - In a large bowl, crack whole eggs. Add the internal seeds of the vanilla bean to the eggs, the honey and the oil (or melted butter) mix well and add the mashed bananas
02:00 - Now, combine the dry ingredients in a bowl: flour, baking powder, sugar, baking soda, salt and cinnamon. Incorporate the powders into the previous mixture, mixing first with a spatula and adding a few at a time to avoid the formation of lumps. Also add the chopped walnuts and mix well.
02:51 - Grease the mold with release spray or brush it with softened butter and flour it. Pour the mixture into the mould, to level the surface well.
03:35 - Take care of the garnish: cut as thin as possible two slices of banana, freshly cut, drizzle them with lemon juice and then grease them, using your fingertips, with apricot jam or spray jelly. At this point arrange them on the surface of the plumcake, offsetting one with the other and then bake the cake.
04:44 - Bake the banana bread in a preheated static oven at 175° for about 50-60 minutes. Before you take it out of the oven, do the toothpick test. Cut your slice and enjoy your banana bread in all its goodness! - Навчання та стиль
