As someone who lives in the uk I fully agree, I have a fish n chip shop around the corner from where I live, sure it isnt 5 stars but chips arent black and soggy and the fish isnt covered in grease.

It's a poor carpenter who blames his tools, and by extension a poor chef who blames her ingredients.
Whilst it is an excuse, different potato varieties make better chips than others. She was using a potato with too much sugar content. That's why they looked burnt. They get quite bitter tasting when used for fries. I think she was basically just ordering 'potatoes' without checking what she was being sent. Also I don't think the oil was hot enough so the grease just soaked into the food.
Came here to laugh about that too, what a lame excuse! I bet those fries were just parboiled quickly then dumped straight in the fryer, which was probably getting worked constantly without any time to allow the oil to come back up to temp. I've worked in restaurant kitchens a fair bit, used to see that all the time.
Serves French fries.... drenched in oil... fish n chip shops always serve thick potato chips, since there gonna be deep fat fried so they absorb less oil.
Why the best is the cheap and simple Maris Piper potato or the King Edward. Low moisture and the fresher the better. If your wondering from the north of England with some of the best fish and chips in the world. So good the Japanese took them home and have great fish and chips. (Firms such as Nissan and Fujitsu)

BUT that's why, if you want to serve great chips, you find what varieties available in your area actually do so, and then make sure to source those. Generally, these are called starchy or floury potatoes.
What you don't do is buy a bag of waxy potatoes then complain they make soggy shitty chips... 🤦♂️
I think Denise is a perfect example of the Dunning Kruger effect - she thinks she's smart because she realizes different batches of potatoes are making different types of chips, but she's not smart enough to realize they're different varieties, and that she should find the best one and source that for consistent quality chips. those seem to be oven chips(or fries, whatever) based on length and thickness along with the fact i think i can see skin on a couple of them at the ends. so they lost the moment they touched oil. (while you can fry oven chips, it aint reccomended, and that oil heat needs to be HIIIIIIGGGGHHHH)
