  • Sambar made in tiffin center style. This dish is made with few lentils, mixed vegetables, Indian spices roasted and ground to a masala paste and boiled with little tamarind juice until done.

    Ingredients:
    Whole red chilly 12 n curry leaves 2 spri
    Pepper corns 8 n turmeric powder ¼ ts
    Coriander seeds 1tb tomatoes 4 n
    Channa daal 2 tb oil 1tb
    Tour daal 2 tb mustard seeds ½ ts
    Fenugreek seeds ¼ ts cumin seeds ½ ts
    Rice 1 ts onions chopped 2 n
    Coconut chopped 1 tb mixed vegetable
    Green chilly chopped 3n tamarind juice ½ cup
    Jaggery 1 tb
    Hing 1 pinch salt
    Directions:
    Heat oil in a pan add hing, whole red chilly, pepper corns, coriander seeds, channa daal, tour daal, cook this till daal is golden in colour, and add fenugreek seeds, rice, cook this in a slow flame till raw flavor is gone and add chopped coconut & green chilly, curry leaves, turmeric powder, tomatoes, cook it for 3 minutes and switch off the flame, once the mixture is cool down put it in the blender and make a paste.
    Heat oil in a pan add mustard seeds, cumin seeds, sauté it and add chopped onions, curry leaves, salt cook this till onions are golden in colour and add finely chopped vegetables, sauté it and add masala paste, water, tamarind juice, jaggery, let it boil for 20 to 30 minutes, after that add chopped coriander.
    Serve this with idly, dosa and vada.

    Loved this recipe...I usually remove all the veggies from Sambhar while eatin it and so I was more eager to try this ;)

    Vahchef if you stop making videos .. I ll feel so lost in the kitchen! Oh and if we want to add bhindi (okra), should we fry it first? Or add with the vegetables in the start ?

    I like this sambhar a lot, and love the aroma of compound hing and fenugreek seeds, both of them are very important ingredients used to make ayurvedic medicine that heal a lot of diseases.I'll make this with less chilli, I will pour 3 sambar spoon to one dosai and eat it..yumm..yumm.yummmm..Thanks so much chef Sanjay Thumma.

    I made mint poha. So tastyRecipe1 tbs of coconut1/2 cup mint levels 1 green chili grind.Soak poha.1 tbsp oil in a pan heat & put mustard seeds to splitter. Add hing Add soaked poha.Add the ground paste to that. Sprinkle 1/4 tsp of termeric powder & salt to taste.

    Brown rice idli 2cups Brown rice coarsely ground1 cup Black gram dhall soaked & ground to a smooth paste 1/2 cup poha soaked & grind with urad dhall .After fermentation steam like usual idli for 12to 15 mins.Tasty & healthy idli.

      You are a great cheff you can better .My grand kids love this brown rice idli .You will never see the difference bet ween the regular rice idli & be in rice idli.when I tried that for the first time I got good result.

    Sanjay, when you add red chillies, do you take out seeds before adding the red chillies or not? Please answer otherwise my preparartion will be very hot.

      Sonal Mahajan We don't take out the seeds. Its up to you how you want to use.

      You can skip if you don't like it as I did. But always fenugreek seeds must be added very less as they taste bitter. Thanks to vahchef!!

    Hi Sir, I run a small tiffin center.. just wanted to know if i can prepare my recipe a night before and then use it the next day?... Or can i prepare the sambar masala paste one day and then use it for next 2-3 days. Also, Please let me know if there is any alternative for the pepper?? as they are too costly for me.
