BASIC RICH DOUGH
1/2kg bread flour
100g sugar
10g yeast
180mL fresh milk
6g iodized fine salt
2 pcs eggs
60g unsalted butter
ENSAYMADA BUTTER
1/2 cup margarine
1/2 cup white sugar
½ tsp vanilla extract (optional)
SPANISH BREAD FILLING
¼ cup margarine
¼ cup packed brown sugar
¼ cup white sugar
½ cup fine breadcrumbs
PAN DE COCO FILLING
2 cups desiccated coconut
¼ cup powdered milk
¾ cup brown sugar
1 cup melted butter
⅓ cup condensed milk

I really love watching Chef Martin. His vids are therapeutic for me, I dont know why. Hehehe. He's really funny and there's something on the way he talks that will make you listen and feels calm at the same time.

Im not a baker but his ensaimada is the ensaimada that i hate to have,because ensaimadas are supposed to be layers of layers of dough then turned into a swirl.
Turuan niyo po akong mag luto chef. Crush po kayo ng partner ko eh, para ako naman maging crush niya. lmfao hehe.
The thing that I can’t understand is after he finished the pandicoco making he put it in the oven setting the oven 160‘f then I saw almost at the end part of the video he baked a spanish and pandicoco again for about 350’f.

no he said 100F so he was proofing the dough before baking
