He believed anyone could be a gourmet. He froze the cheese; he froze everything, but I didn't. Now, I am learning
I don't much care for cellulose with my food😊, so I shred my own block cheese then add a little potato starch that I buy at the health food store. Just don't over-do the starch. A little goes a long way. I close and shake the bag around until the starch disappears. You can squeeze out most of the air after shaking, but don't squash the bag before it is frozen. As long as you don't press the cheese down tight, it will stay separated. If it does get compressed, it usually will separate easily. Great video. Keep well and safe!
I tend to order Italian cheeses in bulk for my pasta and lasagna dishes. I divide cheese into portions appropriate for recipes, put them in small freezer bags, label them then put them all in one large freezer bag. I know, I'm using a lot of plastic bags but I reuse them a few times!
I sliced my mozzarella cheese and wrapped the slices individually in plastic wrap then ziploc....was able to grate it after and did baking. Was quite fresh
I also put 5 to 10 slices of wrapped cheese in freezer , took out and used after 5 months just to see how it tastes and can't tell a difference .. uses Kraft cheese slices. Yah, will do more. Ty for video/comments for confirmations
I live just east of Orlando. Probably goona freeze some cheese before hurricane season peaks. The markets usually empty when a hurricane is coming but shortages only lasts a couple days. Who knows how long a resupply will take while the pandemic is ballooning plus a hurricane.

true, almost, cheese is very dense so it's hard for mold to sprout into it, by the time you see mold on bread, it's probably already rooted through the entire piece, as for cheese, mold will slowly move through it cause it's dense, when you cut mold off cheese, make sure you cut a big block of it off. btw I still don't recommend eating moldy cheese, it's very likely that the mold is all over the surface but under human vision

How to store remaining (leftover ) cheese after opening the polybag and using some? Can I store it back in freezer or have to use completely?
You can absolutely store in freezer after opening. The best part of those cheeses is that they do not loose their texture after thawing. You can keep in freezer and use take what you need as needed!

Youre lucky that your best-by date was like 6 months from March when you bought it. For the past several months here in Ohio the stores have been selling food items that are nearly on or past their best-by date When we asked management why theyre doing this, literally every store manager either did the "huh, let me see that. Oh I didnt know that" and then didnt want to look into it, or they just shrugged their shoulders and said "yeah, well, ya know, we been seeing that a little more often lately" which is only their evasive tactics that purposely dont answer the direct and clear question So in other words, they dont care as long as they make money from us
I watched this solely for the shredded cheese bit because it comes out lumps like you showed - but you didn't show how to prevent that! you say you can freeze and use it well but it never defrosts well and stays lumpy/mushy when defrosted. Please show us how, thanks.

@@debsisaacs When freezing freshly shredded cheese, add a small amount of either tapioca starch, corn starch or flour and mix it thoroughly. This keeps it from lumping together and do not remove the air from the bag or it will clump. I hope this helps even though I'm late to the party. Good luck!
If your cheese is crumbling, I would suggest pre-slicing, placing the slices on a baking sheet, then freezing. I usually thaw a block of cheddar and I'm able to slice it without any issues.

If mold gets on cheese you just cut it off, and the cheese is perfectly good. Cheese is mold.

We freeze the slice cheese all together all the time. It does not stay in a solid block when it is defrosted. All the slices come apart just fine.

Yes, to prevent that you want to freeze it in smaller bags, not the 5lb bag.

If you check your shredded cheese package it now says use 3-5 days after opening.
That's why you can freeze extras! :)

How do you thaw block cheese so it doesn't crumble when sliced?
If your cheese is crumbling, I would suggest pre-slicing, placing the slices on a baking sheet, then freezing. I usually thaw a block of cheddar and I'm able to slice it without any issues.

Those work great! I didn't use them because not everyone has a foodsaver machine.
My chesse always gets moldy before using it all up, I'll just freeze it into parts and unthaw them in the fridge once I use up the one before ^-^
