This guy is spot on with the animal fat. The sugar industry promoted pseudoscience about fats and everyone got so worried about fat they forgot what was the real risk which was sugar.

The kobe beef of pork is the black iberic pig, and has nothing to do with those. The kobe beef qualities comes from the way the pigs are raise in the iberic peninsula in bg farms, free ranging eating grass and acorn

There were Spanish type (Ibericos) hog breeds in North America: Choctaw hog, Mulefoot, and Ossabaw Island. They're heritage breeds so they're endangered and there are only a few hundred left. Also the swallow belly Mangalitsa is a Hungarian breed.

As he said his arrogance started the business, and of course it is his arrogance that he forgets to mention that it is actually a Hungarian breed. Nothing to with Spain. Actually a lot of the Mangalica pigs raised in Hungary go to Spain to make premium ham. Cherry on top that you can see the tree existing colour variation of the breed. If anyone interested check Wikipedia.

Hi, I'm an Iowa rancher. I would like to dispel some of those myths, if I may.
I'm trying to get sum of this ham
I raise hogs that are half Mangalitsa and half Meishan. I don't know if either breed would be better but the mix is fantastic. Mine are docile, easy to keep, and raise an unbelievable number of offspring. They also taste great, much better than store-bought pork.
Where is your farm? Are those pork for sale?

We really need to move on from the idea that one has to have meat every meal of everyday. I’d vastly prefer meat of this quality in just 3 meals a week, not just for taste, but also to not pay into a system that exploits workers, abuses animals, and destroys the environment - all just to produce cheap, garbage-can grade meat and profits for executives and shareholders.

origin of the mangalitza is english and hungarian origin Linclonshire curly coats were exported and crossed with other european breeds. The fat was needed to enable peasants to survive the winter.

you are right, but in this case it is true. Traditional diets all over the world have high intake of animal fats, and much better health than we do. The dietary and health guidelines from the government have been wrong so many times it's not even funny.

Krikit no, it’s been shown that fat isn’t the evil of our diet- sugar is. Sugar companies paid a ton of cash to lobby and discredit scientists saying that sugar was bad for us in the 60s, and pushed for the culprit to be known as fat. Fat isn’t bad for you. Fat free stuff, by the way, is usually full of sugar, and way worse for you.

Animal fat was "banned" from our diet around the same time people started living past 60, and started eating tons of carbs. There is no correlation between the decrease in lard in human diet and the increase in diabetes or hear disease, the timing is simply a coincidence.

nobody is stopping others from owning these pigs. If he is the only one interested in running such a business he could easily find himself owning 100%, and there is nothing illegitimate with that as long as nobody is impeding others from running similar businesses.

Monopolies are never good anywhere, but nobody is keeping anybody from entering this market. If you have a little town where there is only one bakery, technically you could say that they have a monopoly, but because nobody is preventing anybody from opening another bakery, the supposedly monopolistic bakery cannot charge $100 per loaf. If they did that somebody else would open a competing bakery.
In this case it is even less of a monopoly because there are all sorts of pig producers, all sorts of heritage pig farms all over the place, and anybody who wants to can start a Mangalitsa farm today can do so. Plenty of competition + an open market = not a monopoly.
I dont think its as expensive as you think... sort of ham goes for like 15-20 bucks a pound.. can find similar spanish ham for less..

Im reading this comment confused, because where i live in Hungary, mangalica pork is just slightly more expensive than normal (im talking a few dollars/euros more expensive per kg), so if you ever come to Hungary you should definitly try it out
I have tried there pork at a farmers market near me. The shit is outstanding it taste better than beef and turkey. Try one its will change your life, if your vegan/vegetarian this shit will make you a meat person again.

The regulations were repealed decades ago, but the culture that built up while lard and butter were regulated still persists to this day, because they has been no reason for major food companies too change.
Spain is not the origin of the best ham in the world. Vietnam is. All species of pigs originate from SE Asia. We've been doing pig a lot lot lot lot lot longer.
