Well done. For the sauce it’s very difficult to make sauce for tagine compared to cooking in a pan. Since water in tagine tend evaporate quickly, also opening your tagine multiple time get rid of the vapour which is what make your food cooked, so everytime you close the lid, more water will evaporate to build a new Vapour. Don’t open the lid often and make sure once you fry onion, tomato and meat then add your veggies add enough water and olive oil then close the lead for once. You can check from time to time if is it’s still enough water by gently moving the lid from one side slowly up, if you see water close it if you see it’s getting dry add a little bit from the side and make sure you always add hot water and not cold. The sauce is made by a combination of: onion, tomato, olive oil and water. When the food is cooked the less sauce left the tastier and thicker it gets. If the food is cooked but you end up with lots of water, you remove the lead so it vaporise quickly and become thicker sauce Tip: always use 2 onions if your kids love sauce, some dishes you can use 3 onions, onions is at the bottom always for max heat, leading it to melt to from the sauces, if you prefer some visible onion in your dish which always taste good., you can cut 2 onions into small pieces and put it at bottoms which will serve as sauce and add 3rd onion on top of your tagine by cutting it into circles which will not melt and be visible at the end

Practice makes perfect! I think you did really well considering it was your second attempt and you cooked beef, which can be tricky. Basic rules: Keep the lid on all the time for the heat. Towards the end, add some water to get the delicious gravy/sauce for khobz/ bread dipping. Go for chicken tagine next, it should be a piece of cake for you now

Hey that was fun. You did good there Gavin. Many tagines we have had dont seem to have loads of veg. Only about 3 types with the meat. Try chicken with ginger, lemon and olives with corriander on top near the end. Courgette or Green bell pepper and peas. Actually put what you want but those flavours go nice with the cluck. Please always keep in mind that carottes are the first vegetables that should be put in first since they take more time to cook, and when buying vegetables please choose medium to small size, because they often have better taste.
very good tagine, try next time to put the carrots first because they resist more to the heat, the onions are expensive a little bit at this time putting them in last place will give more taste to your tagine 😉
Don't be afraid to add few drops of water several times also near the end of cooking you can use a fork to create a space between the tagine base and the tagine lid/cover so you let your tagine cool a little and let some steam escape and then avoid overcooking/burning the food. FYI i am a chef.

Well done Mr. Gavin ... it tasted good the family are satisfied so that's a 9/10 .... but for using a small tajin for this amount I have to redact a whole point .... and for putting the vegetables at different stages/time I als redact a point ..... but you did your best and that's something that I very do admire so I give you a point extra .. The total is 9-1-1+1 = 8 out of 10 😅😂 .... An eight out ten is very high because I could smell or taste it but it dit made me hungry 😂😁
I could write quite a few comments on your tagine but since it is only your second attempt I would say you did pretty well. There is definitely some room for improvement. Keep in mind that depending on the kind of tagine you wanna make, not all vegetables get along. There are base vegetables then there is the main meat (or fish or chicken), then comes the top part that is usually 2 to 3 vegetables. For example next time you could try topping your Beef tagines with only green peas and artichoke hearts. It's one of my favourite tagines and you should definitely try it out.
My mom taught me that Persley has Big wide leaves while Coriandre has small ones with lot of cuts in the sides it also Can have more flowers in it than Persley. I'm a moroccan But once in Europe i've seen other formes that made me confused lol . PS: some hard vegies should be put at first cuz they need lot of Time to be cooked, liké carrots potatoes... Some others liké tomatoes and chillies and olives Can be added at last.
