Hello Sir, I want to thank you ever so much. I've tried to make this dish 3x's in the past, my sister told me to give up. She said if this is the only dish you can't make, who cares. Of course, I cared. I began to watch to you do it over and over until I decided to follow your examples yesterday July 6, 2023 with my full preparations. (I must say, my daughter makes this dish and it is phenomenal. I can't stop eating hers. But she has moved to a different state now). Therefore, I had to learn. After my preparation, I placed in the refrigerator over night and remembered your full directions and made everything just so. FINALLY! I did it🎉 I was so happy. I recorded and took pictures of everything. I tasted the roue, if you will, and it is fabulous with the spice of the cut in half pepper, oh my goodness. All I have to make now, is the coconut rice. I've made that before and dinner is done. Again many thanks. Once I figure out how to upload my photos for you, I will send you pics. Again, many thanks.
It's refreshing to realize that at the end of the day, so many recipes from different parts of the worls end up being very similar in approach. The only difference are the ingredients you have on hand. We're more similar than we are different.
So many recipes today are shall we say advanced versions of what’s known as ‘peasant food’ ….primitive folk just threw into a pot whatever stuff they had to hand…added herbs, spices for more flavour, then set it over a fire…we’re lucky today we have such a wonderful variety of worldwide foodstuffs to be able to use in our cooking.
@@arriesone1 I appreciate that you have gratitude towards such as a simple but yet unappreciated aspect of everyday life. says something good about you
Yeah many similarities in regions that were conquered/colonized by europeans or traded with them. Many differences in other areas. There's only so many ways to apply heat to something. Simple trial and error taught people the basic cooking methods, and traders/historians spread others
Made this again last night. Hits every time over some rice & peas.🔥 I just always add a tablespoon of grace’s jerk seasoning in my overnight marinade for the chicken.
I could not wait to make this and I ended up making it on Sunday, August 1st. It came out absolutely phenomenal, only added extra ginger cuz I love it. I am just one person in home at the moment and I manage to go through all four pounds in less than 4 days. Yes I ate most of the chicken without anything else, but I did end up having it with white rice and it was outstanding also! Thank you Chris! If I could upload photos right here, I would
My mouth is watering , I've never made it at home , I always get it from a friend or takeaway, im gonna try cooking it this way ,it seems easy enough, a big thankyou from Staffordshire england Chris, stay blessed 🙌
Wow!!! I just made this with chicken and lamb and it has been a long time since I enjoyed food this much. Practically licked my arm! Making your jerk rub beforehand made this dish. Will try it with snapper later this week. Thanks mate!
Me ex parents were from Jamaica oh man stewed chick fried snapper pot roast beer with rice and peas wow got to love these cultural Culinary exchanges …. Super nice Chris 😀🇿🇦🏴
I have never eaten this dish and was trying to figure out a new meal with most of the ingredients coming from what I already had at home. The video was very easy to follow and the end result was amazing! Thank you.
Just made this today for some mates. Went down a treat. So flavoursome. Served with your coconut rice. Apologies of they don't traditionally go together but for me it was all fantastic
That was fantastic I’m doing that tomorrow for dinner for show. I did a jerked chicken the other day that was excellent I’m looking to do more Jamaican food.
Uncle Chris, thank you man this is great. I’m going to cook this most likely this weekend and I will follow the instructions and send you the outcome.🙌🏾👏🏾
Brother...just met your channel. Respect. Great filming. My wife is from Nigeria , she has Mega Scotch B but I am not allowed them. Top brilliant recipe. I put myself and wife in freezer then we are cold down for spicy evening😉 I am going to buy some chicken on the bone in five minutes.
That's a good point about using the dry rub instead of the all seasoning blend!!! Gonna try that swap out cause salt is coming in from so many other directions already
Looks good! However so different from my Trinidadian stew chicken. Your videos have inspired me to do my own as well. Keep up the great work and great cooking!
@@shqa574 lol. Funny because I read it as nuances myself without giving it a second thought. We all slip up. Chris is obviously a smart an accomplished man.
Definitely going to make this.. will probably switch out the parsley for chadon beni. Great recipe, no need to apologize for your little one; I'm sure there was excitement all over the house from those wonderful smells!!!
Saw this video and had to start the marinade that day. Cooking it turned out really easy and straightforward. I didn't have Jamaican seasoning or pimento berries, but I used a Jamaican Allspice for the pimento substitute and made a Jamaican seasoning from scratch. I had to get the browning that very night, but it was easy enough to find. Thank you! I'm cooking it right now and looking forward to this delicious-smelling dish!
Hi Chris! Another suggestion for you at this time of year- add fruits! In particular, I have been loving the addition of fresh peaches, skins removed, pit removed, and sliced up over the pot so no juices escape! The peaches add that hint of summer to the heat of your brown stew (and they also add a great smell that combines somehow with all the other wonderful smells). I prepare this stew on my outdoor grill, and watch my neighbors gather round! LOL! Happy cooking, Chris! Stay healthy!
Yeah... I made your recipe, minus the parsley and I used ground ground allspice.. but, I'm Italian.. and I MUST perfect the flavors.. this got me going tonight and I thank you. Next time I will marinade it over night, but I have to eat this tonight. I've always told the guy at the Dutch Pot.. not to hire me.. because I am going to learn how to cook, and then quit and make my own. This is easier than marrying a Jamaican woman...
Hello how are you Did you put browning in the chicken Also Have you ever tried avocado oil And please do a easy lomein recipe Thanks God bless you and the family
We cannot get Scotch Bonnet peppers where I live. Is there a chilli pepper which will be close in flavour? I am not worried about heat. When I have had Scotch Bonnets, they were not too hot for me, so I am looking for a pepper which is similar in flavour.
Your site just popped up on my feed. I am glad it did. This recipe looks amazing. Never heard of browning. What could I use instead and how much of the alternative would you suggest?
Niceeee...I know in the past you burn sugar to get the darkness but I just use the browning plus too much sugar not good for us black folks so just an alternative but you do you Chris 💜👍🏽

Hello The food looks so so Delicious Good
thanks kindly
What is the spice called browning? I have everything else but I don’t know what browning is … I’d like to make this tomorrow
browning is a sauce thick like Molasse
it also gives it the brown colour
I actually laughed at loud when u talked about adding in parslay haha!
Would be nice to know approx. how many people will this feed? 3-4?
I'm making this today!!!!
I tried buying the cook book, buts its sold out. 😭
Love to try this, what's the browning, is there an alternative?

If only I watched this yesterday before I went to the grocery store.
@Caribbeanpot What is the browning you use? Is that HP sauce? or something else? Please let us know!
Browning is the name of the sauce. The brand in uk supermarkets is Sarsons. Do not substitute for HP sauce!
So could you swap the browning for the likes of a dark soya sauce or the likes of Ketjap Manis if the Browning is not available in my area?
