I just made this tonight. It was great! My whole family enjoyed it. I made it in my Instant Pot and instead of boiling it for 2-3 hrs, I cooked it for 40 minutes. I did everything else the same, even browned the meat in the instant pot. So good. Thank you.

I’m happy to see you use a wok with wok turner and Dutch oven. This recipe looks delicious especially with all those spices. Lamb is one of my favourite meat so I won’t bother to rinse it too much as I’m used to the taste of lamb. Thanks for this recipe it’s very much appreciated.

Made this recipe and it turned out incredible! It was the first Chinese style dish I cooked, so while it was cooking I was worried it would end up sweet due to the smell of the herbs, but it was savory and absolutely delicious. Three of my coworkers can vouch for it as well :)

I just have to correct you on one thing... this is not lamb.... it is mutton. the difference is that lamb come from a sheep up to one year old... mutton comes from a sheep over two years old, and that's why it has a strong flavour and needs to be soaked in water, whereas lamb doesn't. :)

I made this! It's so good but cooking time is long before the meat is tender. Thanks for sharing this recipe! Just a quick question. Doesn't the meat need to be blanched first? I find that many recipes will blanch meat with bones to remove the scums first. Just curious if mutton meat is different to other meats.
Our lamb in Australia must be different, we have never soaked our lamb and I have never noticed any off-putting smell. Lamb mince makes particularly nice spaghetti bolognaise sauce.

It is a cast iron wok. I got it from China. I can't find this type of wok with the hammer mark outside of China. But, I get so many requests and I'm going to make this my first official product soon
Could you do a lamb/goat pilaf recipe? I've seen videos from northern China and Eastern Europe where it's apparently common place. It's not a thing here in the states but I'd love to try it, especially with goat, I love goat meat compared to lamb.

I don't like eat lamb, it smells weird to me but I don't know why I can't wait to try your recipe & your tips to reduce the mutton scents. 💙💙
You can also add some shaoxing wine or dry sherry to reduce the smell of the meat. It tastes really delicious. Happy cooking!

Removing mutton smell : we are rubbing the meat with Turmeric + coarse Salt leave it on counter for 1/2 hour then we will wash it nicely.
