CAFE DE OLLA: Delicious, Traditional Recipe for Mexican Café de Olla served Hot or Iced

- Café de Olla is a delicious Mexican coffee that is traditionally made in an olla de barro, which is an earthen clay pot. But even if you don't have one, you can make it in a saucepan and still enjoy this sweet, cinnamon and spice flavored coffee hot or cold. Read on for the recipe, and if you're ever in Arizona and you're interested in the restaurant that inspired me to make this, here's info on that, as well:

Café de Olla
6 cups of water
1 8oz. cone of piloncillo (this may be too sweet for some, so start with 6 ounces and taste from there.)
2 cinnamon sticks
2 cloves
1 star anise
12 tsp of ground coffee (not instant)
Pour water into clay pot or saucepan and place on stove top over medium high heat. Drop in piloncillo, cinnamon sticks, cloves & star anise, and stir occasionally as water becomes infused with spices and piloncillo dissolves. This will take about 15 minutes. Bring to low boil, then add in ground coffee and mix. Cover with lid, turn off burner, and let steep 5-10 minutes.
Use a fine mesh strainer lined with cheese cloth to prevent coffee grinds from ending up in your cup while serving. Enjoy!

My Grammita was born in Puerto De Luna, NM. She met my grandfather when she was very young they married and moved to the East Coast due to him working on the railroad, then eventually settled in California. I grew up with my Grammita and my Mom always had an "Olla" on the stove I remember cooking our beans in it.😋
Thank you so much for sharing that! I really enjoyed reading your comment and getting a glimpse of your family history. I could even picture the beans cooking in the olla. I have such an appreciation for how things were done back in the day. Our parents and grandparents sacrificed so much in order to give us more. But nothing is more valuable than those sweet memories. ❤
I haven't had this type of coffee much, but the few times I did it's amazing! I wonder if it will ever become popular, like a fad, among the US. When we lived in Mexico we mostly drank powdered Nescafe. I'm not a big coffee drinker because it makes me jittery, but i love the smell. We did have a coffee maker, so sometimes we'd get local coffee grounds, but I didn't like it much. Back here in San Diego, we mostly just made coffee in the coffee pot/maker, but lately my husband has been getting fancy. He got a different pot, I think an Italian press? and a bean grinder, and wow, it sure is a difference! He loves cafe de olla, so I'll have to show him this and hopefully he'll make it!
I have to be careful with my caffeine consumption, too. My eyes start to twitch when I drink too much, and I know immediately to cut it. Like you, I just love the smell. Something about it is so cozy.
How nice that your husband has an Italian press. I can imagine how wonderful that coffee would be.☕️👌🏼 You’ll have to let me know if he makes café de olla. The recipe I shared is definitely on the sweeter side, so he may want to start with a little less piloncillo, taste and then go from there.
I just finished making this using your recipe and it’s AMAZING! My preference I’ll cut back on the sweetness for next time but good grief! This is THE best thing ever!!!
I love these clay pots. They give whatever you cook a different unique taste. This coffee looks so delicious. Really wish I knew of a reliable lead free clay shop.
Yea. You really do have to be careful about that. And you need to cure it. One of these days I’ll try to shoot a video about where you can find them and how to treat them.
We had one for water, in Mexico, that stayed on the dining table. It had a cup to cover the opening. (I doubt it was lead free, I don't think they pay attention to that down there. (Then again, I don't know if it had lead, either.)) Anyway, it was really nice. I didn't know they made cafe de olla in this type of pot, I think I've just seen people use regular pots, like those blue enamel type pots.
Marcy sharing this video was great got to go shopping. Thanks so much for your wonderful posts. ☕️
Glad I could provide a little shopping inspiration, too! Lol
I love it. Thanks for watching!
That looks absolutely delicious! I'm gonna have to try it out. Keep those awesome recipes coming. Have a great day!
I’m glad you liked it. Thanks for following along. ❤
@@marcyinspired1442 Well I made this Cafe de Olla this morning, O M G!!! Thank you soooooo much for sharing. I am officially ruined, so is my wife. She loves this as do I. Happy Sunday and hopefully you get to enjoy your delicious cup of coffee with your hubby today as well. ;-)
@@aevaro4540 Too funny! Loved your comment.❤
Good morning Marcy, its always good to see u....
Good morning. How are you doing? It’s always nice to hear from you, too.
@@marcyinspired1442 im good... Thank u... Im going to try this recipe for my boys...
I absolutely LOVE café de olla! Thank you so much for sharing this recipe. I would truly appreciate if you could show us all how to cure the olla. Gracias 🫶🏽
Thanks! Next time I buy one, I'll be sure to do that.
Sometimes I wish I drank coffee when I see cool recipes like this! But alias... I just can't stomach it! Funny I like coffee flavored things but not the coffee itself, no matter how I doctor it up, no can do!! I loved your little Olla and the video was shot beautiful as always! Great job!
Really? I'm sure you're better off not drinking coffee, health-wise, but I don't know how you can resist, especially when the smell lures you. I'm totally hooked, although I go back and forth with decaf when I know I'm out of control. Thanks for the compliment. I loved the photography in this video, too.
What a beautiful presentation. I always thought cafe' del Hoya was way more complicated. I need to make some. Nice to see your husband. Maybe he can cook with you in the future. I can smell the coffee from here.
Thanks so much. It's always nice to get good feedback. I've been wanting my husband to share his BBQ ribs recipe, but it's a bit tricky because he's the one behind the camera. I'll be sure to show him your comment, as I try to twist his arm.
I'd make this over Starbucks any day
I’m making this later for tomorrow morning, iced coffee yummy. Thanks to you both 🎉
Hope you enjoy it. You may want to start with a little less piloncillo. I love it sweet, but my husband thinks it may be too sweet for some.
What is piloncillo? I have never heard of it living in Colorado. But likewise maybe I should ckeck out one of our fine little Mexican groceries and that would answer my question! Thank you!
Piloncillo is cane sugar in it's purest form, unrefined. It tastes similar to brown sugar. I'm sure you can find it in any Mexican grocery store because it is used in so many desserts. It's mostly sold in cones, which you can shave with a knife if you're just using a little bit. Or it's dissolved in hot water, as you saw in this video. I think it's delicious, but I really have a sweet tooth. Thanks so much for watching!
Just made your recipe. It is wonderful :)
Just the smell of this cafe will entice your taste buds. It is super-delicious; especially on a cold winter night! I will definitely be making this. By the way, love your blouse and clay pots - so perfect for this recipe.
I couldn't agree more! Thank you so much for watching!
Looks delish! Thanks for sharing.
This looks so delicious, because I enjoy iced coffee all summer. I had never heard of piloncillo, and had to look it up. I'm obviously not from the southwest!
I always tell people it’s just sugar in it’s purest form and tastes sort of like brown sugar. We use it in many Mexican desserts. I hope you’re able to find it where you live. I’m pretty sure it can be ordered on Amazon. Thanks so much for watching. 😊
What a beautiful way to meditate and start my day, thank you!
Just found your videos and love them I’m so inspired ❤
Gracias Marcy… here in Patterson ca! I love Cafe de Olla, u inspired me to make my own. Love your positive Chanel, I subscribed and hit the like button & bell. I’m making mine soon, Salud☕️👍🏼
Great recipe! I’m fortunate enough to have one of those clay pots!😊😊 Will be going camping in Quartzite next month and will be making this and regular cowboy coffee for the group there.
It's too gd ❤ from India
Thanks for watching!
The best café de olla I’ve had is slow simmered over mesquite wood in a chimney
Now, that sounds fantastic!
Can you do a video on atole plz
Here's one I did the Christmas before last. If you like your atole thicker, just cook it a little longer and it will continue to thicken. ua-cam.com/video/2U5R2obsorM/v-deo.htmlsi=_7l31w-p_Na3CCQ4
Yum! Where could I find a pot like yours? Thanks!
Is Alebrijes in New Mexico..Albuquerque?? Visiting NM in August..would love to visit and try the coffe..
No. Sorry. It's in Arizona. I put the info in the description box.
Thank you for sharing the information..I grew up in New Mexico..a NMSU graduate..My roots will always be in New Mexico..My best friend lives in Mesa AZ, so I'll add Albebrijes to a must visit when in AZ..☕️🤗

Next up, Abuelitas :)
Marcy, thank you very much. I live alone, so I will adjust the recipe as follows:
Café de Olla, for two cups
2 cups of water
1 Tbsp. Raw Sugar
1 cinnamon stick
1 clove
1 star anise
1 Tbsp. of ground coffee (not instant)
Do you see any issues with this?
I made it. It was very good.
Great video and instructions to making cafe de olla❤ now if you exuse me my turn to make cafe de olla thank you so much😊
I drank this every morning and got diabetes …
Soy mexicana y el café de olla NO LLEVA ANIS👎
Tampoco lleva tanta canela. Se le pone menos piloncillo, si no es jarabe 🤦
Ese cantidad de café es para levantar muertos 😳
