I’m sure it doesn’t taste that way because it cooked so slowly. It just looks that way because it was such a large piece of meat that wasn’t soaking up the sauce the way small cuts do. I personally prefer it the way Julia’s was done (except… non beurre monié, s’il vous plâit!). It’s just different techniques though.

Well... Technically it's caramelization via the maillard reaction. So crystalized isn't an incorrect term.
