    I have watched this wonderful man so much that I can recognize the recipes in the opening credits. Jacques Pépin is a genuine treasure that has made the world a better place simply by being a part of it. Thank you for all the years of smiles, Jacques.       The sounds and noises that the utensils make when cooking, are relaxing and soothing, in fact his voice and the sounds put me to sleep. Back when we had VHS players, I had to record the shows in order to get the recipes because I'd always fall asleep.😴🥱

    Jacques Pépin is nothing short of brilliant. He makes all of this look so effortless and easy, but not by being flashy and intimidating. He has such a "if I can do it, you can do it" attitude and I love him for it.

    Chef Jacques. ,perhaps I am assuming too much, but your style in the kitchen is so great, I believe we would get along great , just your overall way you do things, in the kitchen. including having that glass of the right wine, after or with the meal. The family , means so much in your lifestyle. I think that is so great. ...Happy Cooking!!

    I'm vegan, but I watch JP more than any UA-cam vegan chef because he really shows the viewer how to use vegetables so effectively.

    It's an objective fact that a plate of rosti potatoes with scrambled eggs spread over them is the world's best breakfast. Plus, it gives you all the energy you could need to run a marathon or spend the day sitting around thinking about your life choices.

    This is 2022 and I want to see any video he has made. I would love if he would do a video about his charity work. When he feels like it and if it is not asking too much, I think his reflections on his long marriage and also raising children (he is so comfortable with children). And cooking, he makes us believe we can make cook too, and so we do. Gardening, art, ...is there anything he cannot do! I saw his appearance on Rachel Ray and I could see he so full of life. We all love you, Jacques.

    When he’s cutting tomatoes… and is mildly annoyed at the dull knife and he casually grabs another to sharpen it.
    So naturally like breathing.
    And he’s definitely not doing it for the camera. amazing to watch.

    With all the extreme dishes and rock-star cooks out there, Chef Pepin shows us what essential cooking is all about: Delicious Food. I love to cook but this video taught me things that I never would have thought about. Like simple knife technique (going at a diagonal) to how delicious classic ingredients can be like polenta and yam. We are very lucky to have these videos available for us. Thank you, Chef!

      lapetitenellie Jacques cooks the way cooking is met to be done. Today at culinary school they do not teach the way Jacques cooks. Cooking techniques are getting lost to lazyness.

    I could watch him 24-7 lots of grand ideas on the kitchen master chef Pepin. Yes comfort food is what I grew up on. My grandfather was a chef
    He was a sheepherder as a young man in Greece. He watched his mother cook as a young boy. He was able to get a job as as a chef in the local restaurant and a dishwasher in USA and they taught him how to cook,he cooked many rice potato and lamb dishes. My grandmother from Romania wasn't a chef but she could make spinach pies,sweet noodle pies, many lamb,rice,veal, potato dishes veggies lots of squash,eggplant, corn,.....
    I love cooking myself I said someday I'm going to have a big kitchen with all things like Jacque,so I could try out his delicious recipes .thank you master chef.been watching you for years.. 👨‍🍳.I love when your daughter Claudine helps you out in the kitchen.💕🍮🍲🍽️🍴

      ​@@shaylagogobean417 Yesss! All the instructions I've ever seen make it look like it takes a lot of stirring and attention.
      But if it's complex and finicky and hard to understand where something goes wrong, it's not worth doing at home.
      But it's really simple the way JP does it, if you know the amount of rice and water you need beforehand, and _cover_. It's literally just cooking rice with somewhat too much water. He sees the essence of it and makes it happen. Amazing.

      theresa scott ...oh, the butter is very important! Unsalted! And eef possible, from Normandie! Heh heh. I've found one butter here in Madrid almost as good as the ones from Normandy. But always use unsalted (sweet) butter!

    Jacques Pepin has such a homely feeling with his cooking shows. I love it. He inspired me for my next two weeks of cooking. My Mum had an operation on her knee yesterday so I've ordered a lot of meat that I will roast and cook for her and her boyfriend (who doesn't know how to cook!)

    I love listening to all the things he does and really miss living near a larger city where there were more food choices available. I've moved southish, and while the winters are milder, the food choices are seriously small.

    I made my first Risotto tonight using the quick instructions in the intro segment. I didn’t have any fennel on hand, and I added a thinly sliced clove of garlic. It was delicious and all the kids loved it.
    Thanks Jacques and KQED for this upload, and all the others. I’ve been so inspired lately to try new dishes and have been mining all the Pépin videos I can find for ideas. I also have the big Essential Pépin recipe book which is always gold. Going to try Grilled Lamb next week.

    Pepin comes from Bourg en Bresse which is southern Burgundy not far from Lyon. This is corn country so when he tells you about corn, he knows what he's talking about. Unusual for French chefs.

      @Iris Gross That may be true, but a person doesn't have to be a chef to judge a meal. They don't have to be a producer to judge a movie. They don't need to be a writer to judge a book. They don't need to be a pianist to judge a recital. Stop making the claim that any critic needs to be an expert in whatever they are judging for it to be a valid criticism, it is a trite and facetious claim.

    Does Monsieur Pepin not have feelings in his fingers?! 😅 I always squeal a little in sympathy pain when he mixes things in a hot skillet or removes hot food from a hot skillet with his BARE HANDS! I think years in the kitchen, and knowing where to grab, have given him super powers.
    P.S. Jacques Pepin inspired me to start cooking 28 years ago and he continues to inspire, educate and enlighten. ❤

      maryinsanfrancisco Like most professionals who worked their way up the culinary ladder, he has had his share of burns. He's probably working on his hundredth layer of skin by now. As I am a pansy amateur, I still reach for the hot pads and spatulas.

    Just made the doormat potato pancake. It's the best potato anything I have ever ate, bar none. Mine didnt have the perfect roundness his did. Based upon the uneven edge as shown here with this video, he probably cut the edges for looks. Run some vegetable oil around the edge and shake it to free it when your ready to flip after the 10 minutes Parts of the edges didnt cook as fast as the middle, so I had to cut them, and leave them in the pan to finish. Used seven green onions, which was the best I could guess on start/stopping the video. I believe it was about 10 percent more than he used. After seeing the uneven finished product, I thought it was gonna be a bust. Put some sour cream with a piece of smoked salmon as he suggested, and it was outta this world. It had a softer potato taste than your normal potato, and the green onion and salt and pepper werent detectable. Conclusion? it aint pretty, but it tastes better than pretty..

      You're very welcome. I do that all the time, though I tend to not do the ones that are a bust for me. I tend to think I am doing something wrong. For some reason, these just Jacque videos stayed, while the ones he did with Julia have all been removed. Very sad. You have to wonder what Julia would think of that.
