14:52 - beautiful poached eggs for eggs Benedict, that Hollandaise Sauce looks so velvety. I’ve been doing this recipe for years and learned a little something today. Thank you Jacques and Julia, even after all these years…
I remember watching the two of them when I was growing up. I would watch Julia and Jacques every weekend. They were such an awesome pair who taught us so much about cooking
As a kid I always thought there was a part 2 so we could see what happened to the ostrich egg. I used to be upset thinking that they never aired the next part or hoping that the episode was longer than it really was.
Thank you for posting these!

Lost opportunity for "Egg-stravaganza." C'mon writers!
I disagree, I always want my scrambled eggs fully cooked. I don't care if they are "hard." I can't stand them goopy.
And if you like a filled omelet with vegetables and cheese, you can't do it the French way.
@@nonenoneonenonenoneclearly, you can.
That poor nonstick pan.... someones gonna get hit with a wooden spoon by their mother.
On TV nobody cares about that, the network pays the bill for the pans anyway.
People overcook eggs. IMHO they should never look browned. Browned egg tastes bitter. One of my favorite easy dishes to cook is "scrambled" eggs cooked in the French manner. 14 minutes of slow cooking on low heat until they become like a thick soup, with none of those big overcooked clumps. They are perfectly safe and delicious. Just don't buy cheap eggs.
Burned eggs are bad, browned correctly they're fine.
I love Julia but her omelet is absolutely atrocious.
