@@paullow3377 Man, you can see at 5:29 the cut bleeding while he is cleaning a squid (squid has't got blood with a red color)... This sushi chef is a little porky
There's nothing scary about this Chef's preparations. He is so skilled at what he does. Any man who can remove a pot of boiling liquid using what looks to be a pair of pliers, has my trust and admiration.
This looks much fresher and enticing than the sushi we have here in America. I can only imagine the pleasure that comes from eating such beautifully prepared food
The chef has a big cut on his left hand finger, we can see the cut. Some gloves would be nice to stop spread the germs and infection on his finger . Otherwise he is clean .
Just curious all of the food he served to this couple, total how much does it cost? I would like to go to Japan and like to eating like this 🤍💚👍👍👍👍👍👍👍👍
Thanks for the great reminder on how to cook it to give more flavor. I used to live in Kashii. I used to do a lot of eating in Tenjin. One thing, make sure you have the right American translation for the different foods. Wasabi is wasabi. Nothing more or less. Thanks for making my mouth water. Now onto my kitchen to make some Ginger Pork.

I think its safe to say the blood on the chopping board ins't from the fish 🤮At 5:09 look at all the Black Mould under the Shelf and on the Back wall, that's disgusting.
For different reasons, the most prominent ones are to stop the cooking at the right time over all the piece, It's a common cooking technique and it's important especially for seafood like shrimps that are easy to overcook, and for sanitary reasons since we are talking about fish, that has an habit of being a dangerous source of food poisoning very often, shock temperature change is needed to greatly reduce the risk of bacteria growth before putting it in the fridge (it also easier and faster to lower the temperature of an ingredient that is already cold, than freezing an ingredient that is still hot from the cooking)
Dude legit had a bleeding cut on his finger for this entire video. While handling food that will be consumed raw. He deserves to have his restaurant shut down and re-educated on food safety.
No matter what he paid for the fish, nor how gently he treats them, he has a cut on his hand. I'm sure a band aid is cheaper than ruining all that beautiful fish with his own blood

Oddly satisfying cutting techniques ❤️
watching this during Ramadan is quite hard..........love the work🙃🙃🙃
How relaxing...
The english dish subtitles are wrong. When the chef was grinding wasabi root. The caption read “sea breem egg” 😅
Initial plan:
Me: I'm just going to watch 10 min of the video, 32 minutes is too long!
32 minutes later
Also ME: This Video was too short!
that’s the original wasabe. No doubt, your delicacy is really good.

Can someone explaining to me why in japanese cooking they are always putting the meat etc in the cool water after boiling it
The most common answer will be putting inside ice water to prevent overcook.
they want it raw inside but heat after boiling will remain so they cool it
