    My first time baking bread ever. Just finished baking both loaves and it’s DELICIOUS! It’s moist, chewy, and addicting. I already ate half the loaf. Thank you for this video and for quickly answering my question! The process took almost all day but we’ll worth it for the best wheat bread ever.

    I made this recipe tonight for the first time and it is delishious! Im a newby to the bread making world. For some reason making bread intimidated me and I never tried. Im happy to report my loaves not only looked awesome the flavor & texture of this bread recipe is the best I've ever had, you cant go wrong if you follow the directions!     Honey Wheat is my favorite! I just made 2 loaves and they turned out perfect. I have small bread pans so I cut some off and made rolls. They're perfect too! Thank you for such an easy to follow video. It helps keep beginners like me from getting discouraged.

    Dear Mr. Ramon, thank you so much for your wonderful Honey Wheat Bread recipe. I baked my first two loaves today and I am on cloud 9. Absolutely delicious. Your instructions are very detailed and precise and that is what home bakers need.
    Even though, my heart belongs to Rye Bread (I grew up in Eastern Europe), I love your Honey Wheat Bread. I can imagine what wonderful sandwiches this bread will make. I also intend to bake this bread as a gift to my friends and neighbors. I know it is healthy but it tastes very rich and decadent.
    I followed your recipe exactly, but I took a 7 min. break after combining all flours into shaggy mass. I saw that short procedure some time ago on UA-cam and it helps flours to absorb the liquids. The mass was sticky, but very quickly became just tacky. My husband found me a whole milk gourmet buttermilk in our local Kroger Food store (made by Marburger Farm Dairy in PA), I used 9” by 5” baking pans and I kneaded the dough by hand for 10 minutes. Good workout.
    It was cold today in Ohio and the bread took much longer to rise. I was afraid that the rise would fail me, but no, the loaves came out looking just like yours! I will try your White Bread recipe as well. My American neighbors will love your bread.
    I declare that you are a Bread Angel. That’s right! May you live long and in good health. The world needs bakers and teachers like you!

      I so appreciate your kind words of support for my work and for sharing your experience making the Honey Wheat Bread. You are an inspiration for others who are looking to make the recipe.
      I can tell you are an experience baker as you noted the final proofing of the bread took longer due to the temperature difference in your home rather than just relying on the timing on the recipe.
      I've been up this morning since 4:30 am to bake my naturally leavened Farm Bread and Cinnamon Raisin Bread. Both of which have been fermenting since yesterday morning when I mixed them. They normally take 8 hours from mixing to baking but since it has gotten colder again here in Michigan it took double the time. This is lesson I try to convey to my students when baking in their own homes, "The bread tells us when it is ready to be baked. The recipe is there as a guide and the variable of temperature can change the timing of fermentation greatly."
      It is nice to meet a fellow rye lover. What style of rye bread do you like?

      Elizabeth Allemong a trick I learned is that if you have an oven with the old incandescent light bulb in it, that bulb throws off some heat and it will be trapped in the oven. I turn on the oven to preheat for only about 1 minute, then turn it off and leave the oven light on. I have a thermometer probe that I can leave in the oven with the wire running out through the door to the temperature display on the counter, so I could see what the temperature was inside the oven even though it was off.
      I put the dough in the oven to proof, and I found that the inside of the oven stayed about 90 degrees with only the light on, while the kitchen was about 69 degrees. This really sped up the proofing! Each time I took the dough out to work with it and then returned it to the oven, I turned the oven on for about 20 seconds to warm it back up quickly then made sure to turn it back off. During the last proof in the pan, I left it in the oven until it was time to turn the oven on to preheat, then I moved the loaves to the stovetop to finish proofing on the warmed stovetop while the oven preheated. It turned out great!
      I hope this helps on those cooler days.

    I make this bread once a week. It is so delicious! I do not buy bread from the store any longer. I walk down the bread aisle and the cost of a loaf of bread is what I pay for a bag of flour. I could make this recipe in my sleep but watch this video over and over. I love watching all your videos. I also make your butter rolls and multigrain bread often.       Im done buying bread in the store as well! A week ago I was having a slice of toast with my breakfast and noticed an odd texture in my mouth. There was a piece of paper in my toast! I know it could have been worse but I about gagged!

    Beautiful loaves. I am on my 4th loaf each a lil different than the other and then yesterday it dawned on me, come here and see what I may need to fix and I did. I love how whole wheat looks and smells even without adding the honey. Thanks for the tips, looking forward to making loaf number 4 with more water and possibly using buttermilk too. Wheat bread also twists nicely too...

    Can't get whole wheat flour as an alternate--added 1c oatmeal & 1c wheat bran. Step 10-- folded in 1-1/2 c cranberry/raisins after 1st fermentation. Huge, voluminous rise in final proof after shaping loaves in 5x12" pans--afraid it might collapse but it was the softest, fluffiest, bread I've ever made. Thanks for excellent, succincent vid and written instructions!!

    I made this again with oat milk instead of buttermilk because it’s all I had. The loaves came out as delicious as the first time. I couldn’t tell the difference. The bread was extremely moist and addictive. I ate half the loaf on the day of. Good thing I made two loaves!

      I have made many loaves of bread, watched many others make bread, but never until your video, have I seen the true passion of bread making. (Though I, myself have felt it.)       Hello Sara, It is nice to meet you. You can add a very small amount of soaked whole gran or seeds to the recipe without altering the crumb structure and texture of the bread. The amount of protein varies in All-Purpose Flour from 11% to 12% and can effect the final crumb structure and size of the loaves.     I enjoy your baking videos. You are a true professional. I am not however. My loaves look like yours when I put them in the oven but they go flat (the top only) when I bake them. Very aggravating. Ideas on what to change?

      Hello Ron, It is nice to meet you. I appreciate you sharing your baking dilemma with our community. Your question is a wonderful way for others to learn. From what you described it sounds like the dough is slightly over-proofed when it goes into the oven. This causes the dough to collapse after being heated up and stretching to its maximum size. The structure of the dough becomes weak and then collapses back onto itself.
      As a baking instructor, I have found students who are new to forming and shaping yeasted dough create less tension in the dough which causes it to have less structure and ferment faster. I would recommend using the touch test to determine when your dough is ready for the oven.     How would you suggest storing the bread? While in use should it be kept in the fridge or on the counter at room temp? And if planning to store long term (a few weeks to a month if your making multiple loafs) can this bread be frozen and thawed? Will it hold the texture and flavor after a freeze?       Hello Melissa, Store the Honey Wheat Bread in a plastic bag for up to 5 days or double wrap with plastic wrap and freeze for 2 months. Thaw the frozen loaf in the plastic wrap to room temperature before slicing and eating. Thank you for taking time to ask your question. Have a great day!

      Parece que o pão pode precisar ser assado um pouco mais se estiver desinflando. Depois de esfriar completamente foi o miolo (interior) do conjunto de pão ou era gomoso?

    I'm indebted to you sir. I have made this bread a few times now and it really is the best wheat bread E.V.E.R. Now, I have a question: Is it ok to put the dough in the frig after the 2nd rise (after folding) and leaving it in the frig all night so that I can resume the process resume the next day? Making the bread takes me nearly 5 hours so doing it in 2 parts would be great.

I use clover honey as this is what is widely available in grocery stores here in Michigan. Any honey work well for baking with the exception of "Buckwheat" honey. It flavor is quite strong and not everyone likes it. The sweetness of the honey highness the whole wheat flavor in the bread and helps to persevere the bread and gives it a longer shelf life.     I want to try this bread tomorrow. I have a question please. I've spent a lot of time babying my yeast, keeping it warm and cozy, and even using my microwave as a proofing box. I'm using Lesaffre, Saf-Instant yeast. What is it that makes your yeast perform so well at room temperature? I could save a lot of time just covering it and letting it proof in a bowl on the counter. I love your videos!

      Hello JustUs, I use the same brand of instant yeast as you and I try to keep my home at 70℉ (21℃) to give me consistent fermentation times. Depending on the room temperature the dough might need less or more time to ferment. Using a microwave oven as a fermenting or proofing box works really well. If your microwave is above your stove you can turn the light on for the stove and the heat from the light will create a nice warm environment for your dough to ferment and proof in. Make sure to cover the dough at all time so the surface doesn't dry out. Please let me know if you have any other questions.       Thank you for sharing! I shouldn't be too far off on proofing times. I keep my house at 73 degrees, and my kitchen is usually between 40-50% humidity (Florida). It may proof a little faster, maybe. I'm using your method this time, and I'm curious about the results. I love to bake and really enjoy your videos!

      I just made this bread today. I cut the recipe in half (yes, I weighed everything), and it turned out great. It's very moist with a nice texture. I've only made whole wheat type bread once before, and it didn't turn out well, kind of grainy. This recipe is a keeper! My husband was working today, and when he got home he asked if I made some focaccia. I think he has a favorite! I told him if I made focaccia every weekend, we would gain 10 lbs!

    Hi, I'm Gabriela from Hermosillo, Mexico. I made your Classic White Bread recipe and I've done it 3 times already, it's yummy! my family loved it. I want to make the Honey Wheat Bread recipe but here in Mexico it is not easy to find the buttermilk, can I add only milk or what ingredient can I use to substitute buttermilk? Thank you very much.

      Hello Gabriela, It is wonderful to meet you! Congratulations on your baking success with making the Classic White Bread. Here is the steps to make a substitute buttermilk for the recipe:
      227 grams Whole Milk (room temperature)
      15 grams White Vinegar
      1. Mix together and let sit for 10 minutes before using in the recipe.
      NOTE: The milk will thicken as it is acidified by the vinegar.

    Dear Alejandro, how are you? I have been waiting for a video from you! Just a quick question...can I use this recipe to bake bread in bread maker - the one which you put all the ingredients in and it gives you whole wheat bread after 3 hrs 40 min?

      Hello Vinanti, I appreciate you taking the time to write to me. I've been working on other projects. I am planning to do a series of recipes and videos in the near future. This recipe can be made in a a bread machine. I would recommend dividing the recipe in half as the full recipe will produce to much dough for most machines.     Hi and very good afternoon, this recipe is great, I made it last week, but i note that the taste of honey was missing, is it possible to add a little more honey sacrificing the same amount of water? maybe add 60g more ? .. Can I make the last one rest the dough in the fridge, about 10 hours soon? thank you so much and best wishes.....

      Hello Carlos, Feel free to add the extra 60 grams of honey without changing anything in the recipe. You can retard the dough in the refrigerator but I would suggest doing it during the bulk fermentation. It is better to pick up the recipe the next day with dividing the dough, preshaping, final shaping, and proofing the dough. Thank you for writing and Happy Baking!
