I use a Dutch oven for most of my bread, but this time I tried your cold Dutch oven method, but making a seeded loaf, what turned out was one of the softest and tastiest loaves I have ever made, Thanks John, I love your videos. Tom

I have baked bread off and on for years however I have learned a couple things in this video. First dragging the dough on the work bench to firm up the exterior of the ball of dough. Second the variety of baking vessels other than cast iron. Large cast iron Dutch Ovens that appear heavier with each passing year for me as a smaller sized senior woman.
You know the saying, “measure twice, cut once”, well that also applies to recipes: READ TWICE. I only used 180 mls of water! Wondered why it was so dry 😂 After 39 mins into first rise, I realized my error and punched dough down and slowly incorporated more water. It’s back rising (hopefully!). And your instructions are so beautifully clear!! Duh!

I've never tried making Dutch oven bread in a cold dutch oven, I love the unique shape it takes after rising in it, I've never seen bread like this before

I just finished making a loaf of it, granted, with a few differences because I had some stuff lying around and also my dutch oven was apparently MUCH larger than the one you showed here. 😅 But it turned out AMAZING. I love your bread recipes! They always turn out wonderfully. A few months ago, I purchased a Grain Mill and my bread life has become a living hell! Fresh milled grains produce nothing but Bread Rocks for me! I can't seem to get the hydration regulated across recipes. Could you please do some fresh milled grain breads? Thanks for your content. 💕

Because of the amount of fiber it's nearly impossible to get a decent rise, at least has been my experience, yet folks seem to be able to create gorgeous loaves....just not me. 🥺

This is awesome! It looks well swanky, that. I was bought a dutch oven a long time ago, at least a decade, and I think I've only used it a scant few times, usually when simmering tomato based sauces for spaghetti, pasta and chillis and such. Thanks for this recipe John, I think I'll dust it off and give it a go. Shame Easter has been and gone, would have made for an interesting giant hot cross bun!
Probaly the worst thing you can cook in a dutch oven, is tomato based sauces, the acid in the tomatoes will strip the non-stick surface straight off. It's ok if thats all you cook init, but likes of bread will stick. Thanks for watching my friend. Serves me right for following those random 60 second Facebook recipes, which showed someone simmering a tomato based sauce (for a rigatoni pie, if memory serves!) for 12 hours minimum. A new use for my 'dutch oven'! Thanks John. *BTW* You might be interested in knowing that I recently tested a pack of yeast I had in my freezer that was over four years past it's expiration date. Amazingly? With a standard feeding in warm water, it woke up like it was brand new!

Hi John First rest it rose well like your video ( I had a good yeast reaction) but second rest in Dutch oven it didn’t rise much and ended up like a semi risen loaf. Not sure what I did wrong… will try again.

I thumbs up every video you do. Even if I don't care for the particular recipe you're doing this time, I do appreciate the effort and time you put in to doing videos in the first place and that alone deserves a thumbs up. If you ever find yourself struggling for a recipe for a video, may I make a suggestion. Do a montage type video of several ways to use Puff Pastry. I'm a single older man looking after / taking care of my elderly dementia mother and I watch your channel to get recipes to fix for her so she has a variety of tasty foods and baked things in her final years. I've found that puff pastry, either home made or store bought is highly overlooked in its many fancy and simple uses. The store bought, you have mentioned in the past is almost as good as home made and much less work and I have been making desserts and your sausage rolls lately with it and she has loved all of them. Also to mention and give you credit and a laugh, I told my mother of your using a shower cap to cover the rising bread. She used to bake all the time when I was a child, and she laughed and laughed saying that's genius and why didn't she think of that years ago.

The only thing was after 1st rising when I knocked it back, I could not pulled pull it into a ball as it was a bit too sticky, but I did everything to the instructions . I was impressed with both risings, just wondered why it was a bit too sticky.

- How do I know whether the yeast is healthy?

I just finished making a loaf of it, granted, with a few differences because I had some stuff lying around and also my dutch oven was apparently MUCH larger than the one you showed here. 😅

I love your bread recipes! They always turn out wonderfully. A few months ago, I purchased a Grain Mill and my bread life has become a living hell! Fresh milled grains produce nothing but Bread Rocks for me! I can't seem to get the hydration regulated across recipes. Could you please do some fresh milled grain breads? Thanks for your content. 💕

Because of the amount of fiber it's nearly impossible to get a decent rise, at least has been my experience, yet folks seem to be able to create gorgeous loaves....just not me. 🥺
For starters I think you’ll need much more water in a recipe with whole grains.

I was bought a dutch oven a long time ago, at least a decade, and I think I've only used it a scant few times, usually when simmering tomato based sauces for spaghetti, pasta and chillis and such. Thanks for this recipe John, I think I'll dust it off and give it a go. Shame Easter has been and gone, would have made for an interesting giant hot cross bun!
Probaly the worst thing you can cook in a dutch oven, is tomato based sauces, the acid in the tomatoes will strip the non-stick surface straight off. It's ok if thats all you cook init, but likes of bread will stick.

Whew, that was like 10 years ago now.

*BTW* You might be interested in knowing that I recently tested a pack of yeast I had in my freezer that was over four years past it's expiration date. Amazingly? With a standard feeding in warm water, it woke up like it was brand new!

I thumbs up every video you do. Even if I don't care for the particular recipe you're doing this time, I do appreciate the effort and time you put in to doing videos in the first place and that alone deserves a thumbs up.
If you ever find yourself struggling for a recipe for a video, may I make a suggestion. Do a montage type video of several ways to use Puff Pastry. I'm a single older man looking after / taking care of my elderly dementia mother and I watch your channel to get recipes to fix for her so she has a variety of tasty foods and baked things in her final years.
I've found that puff pastry, either home made or store bought is highly overlooked in its many fancy and simple uses. The store bought, you have mentioned in the past is almost as good as home made and much less work and I have been making desserts and your sausage rolls lately with it and she has loved all of them.
Also to mention and give you credit and a laugh, I told my mother of your using a shower cap to cover the rising bread. She used to bake all the time when I was a child, and she laughed and laughed saying that's genius and why didn't she think of that years ago.

The only thing was after 1st rising when I knocked it back, I could not pulled pull it into a ball as it was a bit too sticky, but I did everything to the instructions . I was impressed with both risings, just wondered why it was a bit too sticky.
