    Hey Lead, vinegars have “MOTHER”. Kombucha has “SCOBY”. They are different. I was into making vinegars, kombucha, kefir, yogurt, sourdough and fermented veggies. Organic cane sugar is a great additive for vinegars and kombucha. I have found regular sugar is too processed. IMO, Honey is not the best choice, especially for newbies. Honey has natural anti-microbial properties which can inhibit the process. This is the reason the tap water cultures aren’t doing as well. The chlorine in the water inhibits the process. Also, I have used a bottle of raw organic commercial kombucha to get a scoby rather than buying one. Happy fermenting!

      Hi there I know chlorine is a volatile chemical. So when I fill buckets to water my house plants I just let it sit a couple of days and it dissipates completely. I wonder if it would be equally effective for culinary uses.

    I worked for a water company for 8 years. There's antibiotics and chlorine in the water. That will slow down growth of bacteria. Both good and bad. I used your filtered water and brown sugar method. I made pineapple and peach vinegar. I'm so excited. 😊

    Very pleased to learn from you. I also have the gardening urge I live in a elder community in a rural area and there is a lot of land. Over the last 10 years some of us started a berry orchard and now it has become a free pick your own for any one in the area to use. We put out the word and many families come! It keeps expanding because every year we prune and we just push the prunings into the ground and mulch! In 3 years we have another 40 ft. row of berry bushes and as we have 4 kinds of berries that means 4 (at least) 40 foot rows a year!

    Started 2 on the 2-1-22. One with pineapple and one with honey crisp apple. Took me all of ten minutes to start. Can't wait till it's ready.

    Hi Lead, love your videos. I have been making vinegar and kombucha for years and have had good and bad batches. I took herbalism classes and learned a lot of information. You are already using molasses because brown sugar is just cane sugar with molasses added. I was also taught that you should never use plastic when making anything. Just like metal spoons, the chemicals from the plastic will seep into your product. Also, before you do your Kombucha class please be advised that if you have metal fillings in your teeth you cannot drink kombucha because it draws the mercury from your fillings into your body. Also, people should do research before drinking kombucha because some medical conditions will not allow you to drink it. We used to purchase our scobbies from reputable websites and we used black tea bags and pure cane sugar to make the kombucha. Thanks for all that you and Lady Lead teach us. You are a blessing to our community.

I was Happy to see a new recipe for making Apple Cider Vinegar because I have been doing it the same way for over 50 years. The way I learned how.     Hi All. If you only have water from the sink to make your vinegar ‘s. Let it sit out for a day so the chlorine can evaporate out of it. If not, it will mess up the fermentation process. This way you can use any type of sugar you want. But, I would not use any sugar substitutes, but that’s just me. Keep up the good work Lead!

    Hi Lead. Yes making kombucha is the same way, and you can use tap water BUT you have to leave it sit for awhile with a coffee filter over the top of the jar so the chlorine evaporates and no bugs get in. Your jars have to be clean with no soap residue so washing with vinegar and rinsing very well and air dry everything you will use kind of like canning jar sterilizing. When it smells like nuthin, you can use the water. Or the Berkey water. 2nd thing, you can make your own a scoby with a famous brand plain flavor inside your black tea mix. My scobies were crazy thick. Mmm hmm love that kombucha. I like mine sweet. Jelly pack lol beautiful! ‘Kombucha kitchin’ is where I learned how to make the booch and I’ve bought that scoby like you held up there it worked well. Have fun! You going to be feeling even more fine drinking that. It healed my gut-along with milk kefir!

    Never throw away your Scobie ! You can compost it , dehydrate it, pulverize it for added diversity in your garden , or sprinkle on dogs food !

    I love your method with the plate in 5 gallon bucket. I used some to clean. When it got low I added a little water. I covered it and it created more. This stuff really does work and I ended up saving money

    I started my apple cider vinegar on Monday. Started homemade vanilla extract on Tuesday. So far so good. I use blackstrap molasses in my garden. God bless and keep you and yours.

    I made 5 bottles back in 2005 and its still bottled. Its almost like a Port Wine. I will try the ACV, but vinegar drops my pressure too low. My bro-in-law makes awesome wine too, he's been making wine for 30 years.

    I keep wanting to say we all need to fortify our family’s digestions with starting our own natural ferments ie ; sauerkrauts, veggies, kefirs , homemade ginger bugs, kombuchas , water kefirs ect. In long term emergency situation those of us who have eaten only processed , refrigerated food will be succumbing to digestive upset because they do not have a properly reinforced steel drum digestion with a diversely protected micro biome . This includes our children ! You can ferment raw applesauce with a ginger bug for children who are averse to pickled or fermented foods. Think out of the box , the garden will save you 🥰

    I make Kombucha also. I have a continuous Brew. It's helped my husband with Diabetes. He drinks some every morning.

    I have to start over...mine had mold it has been 9 days..I missed the part were we had to stir it. I'm off to the store tomorrow to get more apples and try again this time with brown sugar and filtered water...and stirring with a wooden spoon! I'm' still excited!

    To the lady that asked if you can use boiled sink water, the answer is yes. I don’t have a filtration system and I’m too cheap to buy distilled water. God bless everyone.

    🥳🥳🥳 Congratulations Mr. Leadfarmer73!!! You just walked into the beginning of Kombucha 101🥳🥳🥳 the only difference about Kombucha is carbonation, using cane sugar, and tea(black/green) in a dark warm place. I'm making my own SCOBY that way. Vinegar is left on the counter.

    OMG... I was making a batch of vinegar using raisins...I forget where I found the recipe. It had that jelly pack so I poured it out thinking it was mold. I've never seen anything like it. Thank you!!! I probably didn't screw up... I'm trying again.

    Mold is an indication that the balance of acid to sugar is off; it generally will not form if the balance is correct. From google, hope this help.

    LEAD Because of your great video with excellent direction, I made apple AVC and Apple/pineapple mixed in Feb. I started using end of April. IT CAME OUT BEAUTIFUL!! I Just start 2 more batches and I didn't have any white sugar, but Raw Organic Coconut sugar. Looks pretty good!

    I always use distilled water to avoid chlorine, which kills bacteria. The temperature of the room determines how fast it processes.

    Howdie there, Im very much enjoying your postings. Id like to share that you can ALWAYS grow your own Scooby from the Kombucha that you buy in the store. Ive been doing it for years. I had to because my Kombucha consumption was getting a bit too spendy. Also I make my own Ginger Beer, (both adult and kid friendly), Vinegar and soda. Honey based Kombucha is called Jun , or the Champagne of Kombucha. Its a thing. You use green tea and honey in the place of black tea and sugar. Please try this you will be happy .Thanks again, peace

    I forgot to tell you I put lemons and limes I've got white on it it's doing good. I think next I'm going to use grapefruit. I do use wooden spoon. The sugar will turn to something healthy I've done the kombucha you just watch it grow tell it's done.. scoby extra can go to feed your garden look it up they say it really helps 🌝

      @@MaLiArtworks186 scoby yeast on top that grows or put in from one you just done you can buy one but don't have to you can buy kombucha in a drink at stores and pour it in gallon jug of tea and make a drink look up making kombucha at home. The scoby on his is made from yeast bacteria making vinegar. I hope that helps you

    FYI GHL FAMILY: You can make fermentation starter the same way U would when U start making wine or vinegar. U just have to use a lot less sugar. A fermentation starter can be used to substitute baker's yeast and it only takes three days to make it. U can use any fresh fruit skins and raisins that don't have any additives to it (like oils and additional sugars) with filtered water and a small amount of sugar in any container of ur choice and a loosely closed lid. U feed it with alil water and sugar everyday for the three days and keep it in a warm spot. Once U see the bubbles within three days, bam- U got a fermentation starter that U can use to speed up the process of when making vinegars and wines within 30 days and even to bake with!💯😉 And U cnt use tap/city water when U doing any of these things because of the chlorine and fluoride in the water hinders the bacteria and yeast from breaking down the sugar so always use filtered water with NO chemicals in it or has very little contained in.     Lead browm sugar is made with molasses addef to refined white sugar.
    It would be better for you to add molasses and turbinado sugar. Turbinado is heather than refinef white sugar. 💜💚

    Ok would be the best idea 💡 I have ever tried . Excited but scared .at same time. I live in Alaska and have experienced earthquake ,think I have ptsd from it. Very cautious about having to much glassware, so what are other ways to store . Can start with bucket , then what?

    Should I already have the dust stuff collecting on the bottom? I have a lot of white bubbles at the top. Kind of looks like bubbles you see on beer. I started one on 1/31 and 2/1. Also, you mentioned keeping out of the light. Can I put it in the cabinet or just put it still out in the open but away from a window? I am having trouble making all fruit stay under the water though. Will that be a future problem?

    I have well water, so no chlorine problem. My dumb question is: I have no gallon or half gallon jars. For quarts, I'm assuming I use 1/4 cup of sugar? And, BTW, I love the making a slurry idea.

    Black strap molasses can be real bitter because it’s the bottom of the barrel molasses but…. Please try it, I’m waiting.

      Lol! I didn’t know there was aversion to this! It has the most nutrients intact and my children actually ask for it in their raw milk. They love it. Lol I didn’t know we weren’t supposed to like it!
