No Cream Broccoli Soup, Healthy Breakfast cookies and a new Pork Chop recipe

  • HEALTHY COOKIES - 1 banana - 1/2 C peanut butter - 1/2C honey or maple syrup - 2 tsp vanilla - 1C Oats - 1/4C AP flour -1/4C flaxseed or chia seeds
    1/4C protein powder - 2 tsp cinnamon - 1/2 tsp Baking soda - 1/2C raisins/chocolate chip or nuts
    Combine all dry ingredients then combine all wet ingredients in separate bowl. Mix wet into the dry. Spray 2 cookie sheets. Drop by Tbsp full, then flatten slightly with a wet fork. Bake at 350 for roughly 16 minutes.
    PORK CHOPS - 2Tbsp Br. sugar - 2 Tbsp olive oil - 2 Tbsp orange juice - 1 Tbsp red wine vinegar - 2 tsp chili powder hot - 1 tsp cumin - 1 tsp oregano - 1/2 tsp salt - 1/4 tsp cayenne pepper - 3 cloves garlic
    Marinade - combine all ingredients mix well. Put pork chops in a bowl or zip lock bag and add marinate. Put in fridge for a couple hours. Cook as desired.
    BROCCOLI SOUP - 2 medium carrots - 1 medium onion - 2 stalks celery - 3 tbsp oil - 2 - 284ml cans chicken broth - 2 C water - 4 1/2 C broccoli (about 2 small bunches) 1/2C minute rice - 2C milk - 1/4C parmesan
    Cook carrots, celery and onions in the oil for about 6 minutes. Add broth and water, stir. Bring to boil. Stir in broccoli and rice. Reduce heat to medium low, simmer 10 minutes or until veggies are tender. Then add soup in batches to blender, cover. Blend till puree. Return to saucepan. Add milk and cheese, cook until heated through, stirring occasionally. When serving I suggest adding some grated cheese, it adds so much flavor, Enjoy!!
