Great video! My favorite pumpkin recipe is for gluten-free pumpkin nut muffins. They're great as a grab-n-go breakfast, but I usually throw one in my lunch bag as an afternoon snack, or I'll heat one in the microwave in the evening to have with a cup of tea. I only add a few tablespoons of maple syrup for a full dozen batch, so they are not overly sweet, and maple syrup really goes well with pumpkin.
I've been loving to make my oil-free pumpkin pie oatmeal!! Ingredients are rolled oats, puffed quinoa, buckinis, puffed rice ceral, chopped almonds, cacao nibs, cinnamon, pinch of salt, pumpin pie spice, pumpkin puree, and maple syrup! It's SOO good!
Girlllll yummmm. I can't wait to try these! I made pumpkin brownie-ish things... not sure what to call them! Canned pumpkin, steamed sweet potatoes, maple syrup and spices all food processed together and then baked! SO GOOD and so simple!

After you cut your apples, if you wash them in salt water and let them sit for a few minutes they turn out a bit more crisp and dont turn brown for a couple of days. I use this trick whenever I am using apples.

Hey Caitlin! The secret in the last recipe (chipotle and chickpeas one) is not to blend the veggies raw, but to let them cook and at the end taking them out, blending them, and pouring the mixture into the pot. It looks like it won't make any difference but I can tell you it definitely does. Just give it a try ;)

I love meal prep in 1 hour videos, and I'll definitely be making that kale salad soon! I feel like I might be the only one who doesn't actually like pumpkin that much 😶😳 I don't know why, but I have just never really liked it. However I love all the autumnal spices, especially cinnamon 😍.
The voice over audio is always perfect and soothing, but the intro and outro audios always come off a bit harsh and tinny. Maybe because the rooms you film in are more echo-y and less sound proof? Would definitely recommend a better mic for your talking head intro/outro bits. Love your content!!!
I always LOVE making your recipes! I never have any inspiration or ideas to come up with my own so i guess yours will have to substitute for my lack of imagination 😉
You don't need to use any canned foods, all this can be prepared from raw sources. You do need to soak chick peas/beans overnight then boil; vegetable stocks/soups are very easy to prepare; fresh pumpkin is available at grocery markets. Of course this requires a lot more time to prepare. I live in uk and sometimes certain foods are only available in season, like pumpkin. Anyway, great video with good recipes.
