Love this. I wanted to can roasted peppers years ago, before I had a pressure canner, and the only option was a vinegar brine solution in a water bath canner and nobody seemed thrilled by that. I hadn't check back since I got my pressure canner, so this was a pleasant surprise. I only have enough in the freezer for a batch of roasted red pepper soup and a few extra to make my all time favour sandwich. Next year, I will make free to go to town and can them once they are roasted, and there should be enough liquid from them to top up jars. Thanks for showing this.
Your peppers will be great to have on the shelves Tony! I think pimentos are just small jars of roasted red peppers packed in water or oil , if so you could make a few small jelly jars for recipes you use pimentos in like pimento cheese spread , or cheese balls! I'd love to see some videos on how to use these in a recipe as well as some other canned foods. I've been canning, mostly meats. I've canned tomatoes from the garden n some pickled beets but most other fruit n veg I've I've grown I ve flash frozen or dehydrated. Thanks Toni, for all your ideas.
Hi Toni - your quilt looks lovely. I’ve never canned peppers, but have pickled some - I’ll have to try that out - thank you for the great ideas. You cleaning out the freezer reminds me that a couple of weeks ago I froze 8 cases of spinach and 4 cases of celery - so it’s time for me to get them out of the freezer and into the freeze dryer so they can be put into long term storage. I got a little side tracked with other things 😂 - our food bank just received its own freeze dryer I’ve been waiting for it to arrive so I could inspect it for damage before accepting it. I have been planning lessons for training other volunteers so that it can be put into action as soon as the building renovations where it will be housed are completed.
Do the consistency of the peppers change after you pressure can them? I just saw an Italian guy that water bath them and he said that are safe for a year. Is there any differences in regards of texture when you pressure can them Vs. Water canning them?
@@HerHomesteadSkills thank you for your reply. The video I mentioned, he fire roasted them, peeled them and water bath them until the water boiled for a few minutes with no water added in the jars. I might give that method a try to see how they come out. He said that they stay good for a year or so with no refrigeration. Thank you again for your kind reply 🙂
did you know that they now sell seeds for zero heat habinada, cayenne and jalapenos ? I am overwintering a couple habinada plants and sprouting no heat cayanne and no heat jalapenos. To me it means you can add more peppers for taste and only a few regular heat peppers to suit your heat taste.

As you use them, you can drain the water and add olive oil and garlic and put into the refrigerator.

Yes they get softer! I now prefer to wash and freeze.

no I didn't and I for one can't take the heat so I keep them out of my food.
35 mins is a time I've seen twice now in videos for canning. How does one determine the time to cook for?
Roasted peppers are made by burning off (blackening) the skin and then pealing it off...before either freezing or canning.

You could of put your stock in with them. Pint jars of stock is 20 mins. It wouldn't hurt stock to go the extra time.
there may be valid reasons not to mix different foods in the canner...sometimes there is a bit of seepage.

if something does siphon, it won't get in the other jars.
