- Ingredients
- baguette (you want one from a Vietnamese bakery as they are light and crispy. If you can't find one, you can use a normal baguette)
- pickled carrot and daikon (recipe below)
- chicken liver pate
- cucumber batons, around 10cm
- spring onions, cut into 10 cm strips
- coriander
- mayonnaise
- Maggi seasoning
- sliced bird's eye chilli
- sliced Char Siu Pork (or chicken) (recipe below)
Method
1. Start by warming the baguette and slicing it in the centre.
2. Add the pate to one side and mayo on the other, then a few drops of the Maggi.
3. Layer in the pork, cucumber, spring onions, pickled carrot and daikon and coriander.
4. Finish with the sliced chillies and enjoy!
Pickled carrot and daikon
- 1 daikon, peeled and cut into matchsticks
- 2 large carrots, peeled and cut into matchsticks
- 1 tbsp salt
- 2 tbsp sugar
- 250ml white vinegar
- 250ml water
Method
1. Place the carrots and daikon into a bowl, sprinkle with the salt and mix well. Set aside for 30 minutes.
2. After 30 min, wash and drain well.
3. In a jar, add the vinegar, water and sugar and mix until the sugar has dissolved.
4. Add the washed carrots and daikon to the vinegar and leave in the fridge for up to 1 month but you can use it straight away.
Char Siu Pork
- 2 tbsp hoisin sauce
- 1 tsp honey
- 1 tbsp soy sauce
- 1/2 tsp Chinese 5 spice
- 1 tbsp brown sugar
- 1 pork loin (chicken thigh fillets also work well)
Method
1. Mix all the marinade ingredients and marinate the pork for 1-4 hours.
2. Grill over a hot grill until cooked through.
3. Rest for 6-7 minutes before slicing. - Навчання та стиль
Andy's ability to cook Asian food is amazing. From Korean, to Japanese, to Chinese, to Vietnamese, to Thai, to Malaysian, to Singaporean. Takes a lot of skill, considering vast differences in culinary approach, ingredients (apart from a few obvious common ones).
With his amazing Japanese inspired tattoos, ability to cook Asian foods so well, one could swear Andy is Asian in another life.

I am truly astonished by your skills. But even the bread looks really authentic, and a real banh mi would have this super airy inside and the crispy slightly chewy outside, it's not just an normal baguette (Vietnamese like their bread airy, plus it makes the bread seem bigger than it is, compared to the dough weight). You do pay a lot of attention to the small details! Chapeau!
He lives in Australia. Where I live in Sydney, most of the bakeries are run by Vietnamese families for generations. I don't know exaclty where he lives, but if it's the same case as me, he'll have no issue getting the bread for Banh Mi.

I raw dog the mandolin, too. Fortunately, I still have all my fingers as well. I attribute it to being extra careful and giving myself a lot of end to eat to avoid getting my fingers too close to the blade.

if you replace that char siu and soy sauce with crispy pork belly and sweet spicy sauce, you made another version of banh mi which is delicious as heck
no need to replacing. Add them both to Bánh Mì and it's gonna be lit. We always add both char siu and crispy pork belly here.
Or some sautéed steak n onion on a Bánh Mì is just another level.

Well I married a person who wants 'infinite' amounts of food with different cuisines, but don't even want buy the necessary amount of grocery to our home. He always says he's out of budget, but can buy large amounts of food for himself and eat.
Marrying a supportive husband was my wish, but that also is in vain.
