  • Thanksgiving-Turkey Stuffing
    Serves: 8
    Per serving
    1/4 Lean
    1.25 Green
    1/2 Condiment
    1/4 Healthy Fat
    INGREDIENTS
    12 oz. Low Fat Turkey Sausage (1/4 lean)
    ½ C. Mushroom, chopped or 2.75 oz. (1/4 green)
    1 C. Green Onions or 3.52 oz. (1/4 green)
    1 C. Celery, chopped or 5.3 oz. (1/4 green)
    4 C. Cauliflower, chopped or 19.12 oz. (1/2 green)
    ½ C. Low Sodium Chicken, Turkey or Vegetable broth (1/8 cond)
    ¼ C. Walnuts, chopped (1/4 healthy fat)
    ¼ C. Fresh Parsley, chopped (1/4 cond)
    1 Tsp. Sage (1/8 cond)
    Cut the Turkey sausage into small pieces cook in a large sauté pan. Add the mushrooms and cook until golden about 3-4 minutes on medium heat.
    Add the onions and celery to the pan and cook for about 5 minutes or until softened.
    Add the cauliflower and cook for about 8 minutes; you want it to be brown and caramelized a bit, so don’t stir too often.
    Add the broth and cook on medium heat until no liquid remains in the bottom of the pan.
    Add the parsley and sage and combine.
    Add the walnuts and cook for about 2 more minutes. Enjoy!!!
    ***Can be served hot or at room temperature.
