Interesting, I get beef heart steaks as a treat for my dogs. Cheap and they like it. I always sauté the heart for the dogs. I've tryed it, very beefy but never thought to smoke it! Gonna try that! Thanks!
Internal temp and color look perfect. Excellent reverse sear! I have a really similar recipe for venison heart that we usually throw together shortly after harvesting a new deer. I might throw together a video of it this season! 🦌 ❤️

Hi Mike. Thanks a lot. That’s stuff is hard to find in FL. I got yesterday a heart and a tongue. I assume that both goes with the same procedure. Maybe I missed it, but how long did the heart roughly take to smoke? I don’t have a smoker yet, but a gas grill and my lowest temp I can get is 225. So what you think how long it would take to 120F? And you think the tongue maybe the same time?
Thanks for watching and appreciate the question! Always go by internal temp , but I’d say the estimated time took about 2.5-3hrs for the heart! As for the tongue, that’s a very different process . You’ll want to parboil the tongue for 30mins-1hr , peel the membrane off the tongue , then season/put in smoker. Smoke at 225f-250f until an internal temp of 150f to slice, 190-200f to pull. Either way you’ll experience some delicious tongue !

Could you do this for a lambs heart?
Definitely! Only difference is lamb hearts won’t take as long to smoke since they’re smaller so just gotta keep an eye on internal temps.
