My name's Mike, and I love meat!
I use my smokers to cook everything from pork, chicken and beef to exotic and wild game. Growing up loving the outdoors, fishing and hunting, etc. I quickly became a believer of never letting any part of the animal go to waste. I love trying new things and going out of my comfort zone- hopefully it inspires others to do the same. I'm no "pitboss" and I'm definitely not a chef, but that doesn't mean us normal folk can't have a passion for smoking meat!

THROWBACK! Smoked Giblet Platter - Duck Heart, Rabbit Liver & Kidneys, Chicken Liver
When I first started my channel at the beginning of 2020, I completely forgot I filed a video utilizing giblets from some previous cooks! Throwback Thursday it is! I have some duck livers and a duck heart, rabbit livers, a rabbit heart, rabbit kidneys, and chicken livers. From the chicken livers we'll get a nice pate, and all will be a tasty snack comin' out of the smoker.
INSTRUCTIONS:
-Rinse off all the giblets under cool water- you can soak in buttermilk to get rid of the "bitter" taste, but I'm skipping this step since I enjoy the strong taste
-Sprinkle with equal mixture of salt, pepper, and garlic powder
-Sprinkle with chili powder
-Cover the giblets with slices of butter
-Set your smoker to 200f
-Add your choice of wood- hickory is a great choice for this smoke
-Smoke for about an hour or until liver is firm- i took it to an hour and fifteen minutes
-Your giblets are ready to eat! Enjoy your livers, hearts, and kidneys with crackers and cheese or chow down as is
-For the pate I'm using the chicken livers (you can use the other animal livers also) - simply add to a bowl, mash and stir with a fork until the livers are broken down to a paste consistency. Add your choice of spices to make it your own recipe
-EAT!!!

Looks like a great new way to try. I've had in a Bolivian style stew. It's delicious when done right. The key is time to break the meat down.

Mike, I have used your system a number of times. I am getting ready to put some filets on the smoker. I use a Masterbuilt electric that works okay. I am saving some to eat tonight, and putting the rest in Foodsaver freezer bags.

Do you put in more wood chips over time during the 3 hours or just the initial 1 load of chips?
I usually check the tray and replenish as needed!

What flavor pellets did you use?

Recipe: Glaze 1/2 cup each honey/maple syrup 1tbsp mince garlic 1tbsp thyme Brine 4 cups brown sugar 1 cup kosher salt 2 tbsp black pepper 1tbsp garlic powder 2tbsp dill
How long did it take to cook ?
About 4-5 hours!

Just found this. Don't have a Masterbuilt anymore. It died in a hurricane, unfortunately. I do have a King Chii (cheap, but mostly adequate small smoker that I picked up on a good sale), and I know how to adapt recipes. Tonight, it is smoked liver and onions! This looks amazing.

@@MeatyMike It took a little longer, and I ended up finishing the liver in the oven but the taste!!!!!!!!!!!! I'll probably never pan fry liver again! My husband, brother and Iloved it! So the next night, I smoked up a couple of pork tenderloins.
How long did you smoke them?
I didnt go by time only internal temp!

You can keep them all the way open !
